Culinary Operations Manager — El Califa de León NYC
Location: Flatiron District, New York, NY
Compensation: $70,000 annually + benefits
Employment Type: Full-Time

The Role

We are looking for a Culinary Operations Manager (COM) to lead the back-of-house operation of our New York flagship. The menu is set — four tacos, nearly 60 years of history behind each one — and your most important responsibility is to protect it, ensuring that every taco that leaves our kitchen reflects the same standard that earned us recognition on the world stage.

This role is designed for a driven culinary professional who is ready to grow beyond the kitchen and into the business of running a restaurant. The creativity we value here is in your leadership, your problem-solving, and your ability to find solutions that uphold our standard regardless of whatever challenges a day throws at you. If you want to develop the operational and business skills to grow as a restaurant operator — food cost, labor cost, systems, team development — this is where that path begins.

Who We Are

El Califa de León is the first taqueria in history to receive a Michelin star. Founded in 1968 in Mexico City's San Rafael neighborhood by the Hernández family, we have spent nearly 60 years doing one thing: making four tacos with absolute precision and zero compromise. Our signature Gaonera — thinly sliced beef filet, salt, lime, a hand-pressed corn tortilla, and house-made salsa — made history in 2024 when we became the first taco stand in the world to be recognized by the Michelin Guide, which described our cooking as "elemental and pure." We are now bringing that same uncompromising standard to New York City for the first time, and we are building the team that will carry it.

What You'll Own

Production consistency
BOH scheduling, ordering, and inventory management
Food cost and BOH labor cost accountability
BOH hiring, onboarding, and ongoing training
Leadership and day-to-day management of three reporting Captains
Upholding and reinforcing the culture, standards, and identity of the brand

What We're Looking For

2+ years as a Sous Chef or equivalent head-of-kitchen experience
A genuine respect for simplicity and precision
Strong leadership instincts and the ability to coach and develop people
Ambition to grow as an operator, not just a cook
Calm, accountable, and disciplined under pressure
Bilingual English/Spanish a plus
