Full Job Description

Come Join the Culinary Team as a Line Cook at Ocean Edge Resort & Golf Club in Brewster.

Full time and seasonal positions available.

Key Responsibilities Include:

Prepare and cook food according to recipes, quality standards, presentation standards, and food preparation checklist. Know ingredients and communicate to front of house staff to ensure no allergies are compromised.
Maintain adequate supply of all prepared products on hand and ensures proper storage and refrigeration of same.
Practice correct food handling and food storage procedures according to federal, state, local and company regulations
Prepare, maintain and monitor quality control for hot food items including, but not limited to, meat, fish, fowl, sauces, stocks and seasonings.
Prepare proper plate and platter presentations for banquets; Ensure proper portion, arrangement, and food garnish.
Interacts with guests while operating a clean, organized action station.
Carve buffet meats as requested by guests.
Set up for meal periods by ensuring that stations are set up based upon anticipated volumes.
Keep equipment clean and in proper operating conditions.
Complete food requisitions to maintain inventory items.

Our Cooks must possess the following knowledge, skills and abilities and be able to explain and demonstrate that he/she can perform the essential functions of the job, with or without reasonable accommodation:

Good working knowledge of the fundamentals of cooking, including: broil, sauté and grill, the making of soups and sauces and general food preparation.
Good working knowledge of accepted sanitation standards and state health codes for Massachusetts.
Basic mathematical skills necessary to understand recipes, measurements, requisition amounts and portion sizes.
Ability to read, write and understand the English language in order to complete requisitions read recipes and communicate with other employees and managers.
Sufficient manual dexterity of hands in order to use all kitchen tools, i.e. knives, spoons, spatulas, tongs, etc.
Ability to perform duties in small spaces.
Ability to perform duties within extreme temperature ranges.
