The Role: We are seeking a dedicated General Manager to lead our gourmet retail shop, act as the primary face of our business, and ensure every customer experience reflects our commitment to quality.This is a hands-on, store-focused leadership role. We need a professional who has an and finds fulfillment in the daily rhythm of a local retail shop —the morning prep, the customer relationships, and the meticulous care of our inventory. You will have full responsibility for the shop's daily operations, personnel, and overall performance.

Core Responsibilities

Butchery & Production: Oversee daily whole-animal breakdown operations, ensuring high yield, consistent cutting standards, and superior quality control.
Inventory & Procurement: Manage all daily ordering and inventory cycles . Maintain a balance between local, farm-direct sourcing and consistent stock levels, ensuring the display cases are always stocked with premium product.
Facility Care: Maintain a pristine, audit-ready shop environment. Manage all facility maintenance, sanitation protocols, and health department compliance standards.
P&L Ownership: Manage the shop’s financial health, including daily sales tracking, labor scheduling, and operational expense management.
COGS Control: Rigorously oversee Cost of Goods Sold. Analyze product margins, minimize waste/shrink, and manage vendor relationships to ensure optimal pricing and product availability.
Customer Engagement: Serve as the definitive "face" of the shop. Build and maintain personal, long-term relationships with our local clientele.
Team Development: Lead, train, and mentor our team of butchers and staff. Foster a culture of excellence, respect, and deep product knowledge.
E-Commerce Management: Lead the day-to-day management of our online shop, including order fulfillment, inventory syncing, and customer pickup processes to ensure seamless service for local orders.
In-Store Experience: Oversee local promotions, seasonal offerings, and store merchandising to keep the shop engaging for our community.
Sales Growth & Commercial Performance: Drive revenue growth across in store and e-commerce channel, improving product mix and merchandising, elevating the customer experience and leading team to deliver against sales targets.

Qualifications

10+ years in managing high-end food retail, specialty butchery, hospitality, grocery or artisanal culinary operations.
knowledge of whole-animal butchery, inventory management, and food safety/sanitation requirements.
Experience managing the ordering, inventory and procurement of non-meat food product, including specialty foods and complementary retail offering.
Proven experience driving sales, revenue growth, and overall business performance
Strong understanding of P&L management, COGS control, inventory, procurement, and team management
Working knowledge of food handling requirements, food safety standards, and Good Manufacturing Practices (GMPs)
ServSafe certification required, or ability to obtain certification within a designated timeframe
Experience leading and developing high-performing teams in a fast-paced, customer-focused environment
Strong operational knowledge across production, inventory management, facility care, and quality control
Experience managing both in-store and e-commerce operations preferred
Excellent customer engagement, communication, and problem-solving skills
Bachelor’s degree in Hospitality, Food & Beverage Management, Business Administration, or a related field preferred
