Full Job Description

REPORTS TO: Director of Food & Beverage/Food & Beverage Manager/GM

BASIC PURPOSE: Position is responsible for the day-to-day operations of all food-service operations of the hotel, including all restaurant and bar outlets.

FUNCTIONS/RESPONSIBILITES:

· Assist with recruiting and hiring of food service employees, as well as training, follow-up and continual monitoring of departmental functions

· Conduct performance reviews, resolve problems, provide open communication, discipline and as appropriate.

· Oversee functions of F & B departments within the hotel, including restaurants and bars, catering and banquet operations

· Work closely with the Sales Team to maximize revenue and coordinate all functions where F & B services are required in the restaurant or bar.

· Monitor cost-saving procedures for F & B outlets

· Monitor and ensure appropriate stock and inventory of food, liquor and supplies to ensure all guest service are appropriately serviced

· Work with the culinary team and Director of F&B to review and implement menu ideas and promotional opportunities

· Communicate openly with all F&B staff to ensure delivery of outstanding customer service to all guests

· Cover shifts as needed in situations when servers and bartender staff either call off or request time off

· When needed, assist other departments and employees with any tasks requested by a supervisor or manager

Knowledge and Skills:

Education

Post high school education preferred, including specialized training in the culinary field and Food & Beverage Management practices.

Experience:

Experience required by position is two years of employment in a related position with this company or other organization(s)

Skills and Abilities:

· Requires management skills.

· Ability to provide information and associated services to hotel management and guests.

· F & B Supervisor experience with knowledge of the restaurant/hotel practices and procedures

· Ability to work flexible schedule. Long hours are sometimes required, including evenings, weekends and holidays

· Ability to understand and adhere to departmental budgets and financial expectations

· Written and verbal communication skills

· Must maintain composure and objectivity under pressure

· Must be effective in handling problems in the workplace, including anticipating, preventing, identifying and solving problems as necessary

· Must be effective at listening to, understanding and clarifying concerns and issues raised by team members and guests.

· Have knowledge and understanding of all department policies and procedures, and communicate and enforce all policies fairly and consistently with staff.

No. of employees supervised: Supervise five or more employees

Travel required: Minimal, training classes, vendors, task force, etc.

Hours Required:

· Flexibility in scheduling, including the ability to work nights, weekends and holidays required

· Must adhere to the time and attendance policies set forth by the company

ENVIRONMENT: Physical Job Requirements

Lifting/Pushing/Pulling/Carrying

Position requires frequent and daily lifting, pushing, pulling and carrying of a variety of hotel equipment, tools, carts and machinery of varying weights

Bending/Kneeling

Frequent bending and/or kneeling throughout the day required

Mobility

Position requires total mobility at all times throughout the hotel.

Continuous Standing/walking

Position requires the continuous standing and/or walking in varying degrees throughout the day.

Climbing Stairs

Position may necessitate the frequent use of stairs, including the use of ladders

Driving

Limited driving on an occasional basis for supplies, equipment, etc.

Work Environment

· This position is a predominantly indoor position which requires the individual to work in a fast-paced and often unpredictable environment, mostly in front of the house.

· This will include working around a number of heat and/or cold producing appliances and devices, a diverse workforce, a work area prone to congestion, wet floors, etc.

· This position will also include interacting with guests and managers

Hearing/Speech/Vision

· Position requires the employee to be able to clearly communicate with, understand, and respond to direction

· Must be able to train, mentor, administer discipline to and communicate policies and procedures to the engineering staff

· Must be able to clearly communicate with guests and coworkers in a professional and articulate manner

· Must have excellent written and verbal skills, including the ability to compose business emails

· Must be able to visually monitor, read and respond to reports, written requests, and written policies and procedures

Chemicals/Agents: Position requires exposure to or use of:

Water treatments, industrial strength cleaning and degreasing agents, and other kitchen-related agents may be present

Protective Clothing Type:

· Non-slip shoes required

· Protective gloves when required/appropriate

· Hairnets and beard coverings when required/appropriate

Equipment Operation

Position requires the frequent use of a variety of kitchen appliances/devices, both manual and electric

Other Considerations

Personal appearance and grooming is key in this position due to the high guest contact nature of this position.
