General Manager, Von Trier Tavern

Milwaukee's East Side · Full-time · Evenings, weekends, holidays

The job at a glance

Pay: $65,000–$85,000 base plus performance bonus tied to revenue, prime cost, and guest experience

Reports to: Owner, leading the AGM/FOH Manager, Chef Manager, and Bar Manager

What you'd lead

You'd run Von Trier. The guest experience, the management team, the P&L, and the growth of the business. You'd lead a three-person management team -: AGM/FOH, Chef Manager, Bar Manager - coaching them, supporting them, and holding them accountable. You'd own the floor during peak service: greeting guests, touching tables, coaching staff in real time, leading service recovery, and setting the standard your team holds to every shift. You'd own the P&L and the growth targets that make the next chapter of Von Trier possible.

This is not an office job. The GM at Von Trier is the senior leader on the floor, not behind a desk. You'd spend much of your time in the room, with the team and the guests. The paperwork happens, but it doesn't happen instead of hospitality.

Why this role exists right now

Von Trier has been a Milwaukee institution since 1978. Our group, Nitelite Hospitality (Bryant's Cocktail Lounge, At Random) took over last year and have spent the past year upgrading equipment, systems, and the team. We're now building a new senior leadership team for the next chapter and are looking for an experienced GM to lead it.

We have ambitious growth targets for 2026 and 2027, both in overall revenue and in the food program, and the GM will take the lead to hit them. That growth depends on a leader who wants to build something: a healthy management team, durable systems, a proud staff culture, and the financials to back it all up. This is a growth-phase role with engaged ownership, a budget for development, and a James Beard nominated kitchen consultant supporting our kitchen growth.

A bar where the food matches the room, the service matches the history, and the team is proud to come to work. Where staff stay because they're growing. Where guests come for the beer and the décor and stay for the schnitzel and return because of the way they were treated. Where a small mistake becomes a moment of hospitality, not a complaint. Where the GM is the senior leader on the floor, not a working manager covering shifts, but a real leader coaching managers, coaching staff, and connecting with guests every shift.

What we're looking for

5+ years of full service restaurant or bar management experience, including 3+ years as a GM or similar senior leadership role with full P&L and growth responsibility
Direct experience leading a management team
Ability to create, execute, and enshrine systems to improve and perfect hospitality, food preparation, cleaning and sanitation, and general business operation
Develop and maintain high level of service and hospitality standards for bartenders and servers
Direct experience overseeing a kitchen operation, including food costing and menu development
Comfort with the financial side of the business: P&L, prime cost, labor, and other KPIs
Strong written and verbal communication; comfortable with Slack, email, Google suite, and POS administration (Toast preferred)
A management style grounded in servant leadership and a real heart for hospitality
Available evenings, weekends, and holidays
Valid Milwaukee bartender or manager’s license, or willingness to obtain one
Reliable transportation; able to lift 50 lbs and maneuver kegs up to 160 lbs as needed
Ability to stand on feet for up to 8 hours, ability to quicky navigate spaces, including multiple stairs, often while carrying trays or heavy objects of 30+ pounds (such as ice buckets, cases of full bottles, or trays of food and drink) .
Ability to clearly communicate in English, both verbal and written communication are required
Ability to interpret complex data under pressure and make well-informed split second decisions

Preferred

Experience with a full-service bar program (craft and import beer, cocktails, wine)
Familiarity with or genuine interest in German bar culture, history, and cuisine
Familiarity with Milwaukee's hospitality community
Expert level experience using Toast, Homebase, Tripleseat, and XtraChef
