Bakehouse Bread Supervisor/Bench Lead
Position Summary:
*
This position oversees the bread team, ensuring that above all else, the bread is given priority.
*
Must follow fermentation of dough and divide when the dough is ready.
*
Must audit procedures of mixers, bench and oven bakers. For example: is a thermometer being used at the mix, and are mixing times and temperatures being recorded daily? Are the bench times being followed? Is the oven baker allowing the bread adequate proof time?
*
Aid and provide feedback and information to TL/ATL in creating realistic schedules.
*
Mix, divide, shape loaves, bake bread, and communicate daily production schedule with bakers.
*
Accurately record mixing and fermentation times as well as dough temperatures.
*
Accurately proof and retard bread.
*
