SOMMELIER - SENSIBellagio - Las Vegas, NVIt is the primary responsibility of the Sommelier – Sensi to oversee all wine service in the specific outlet. The Sommelier will also oversee staff training, wine list maintenance and wine inventory. All duties are to be performed in accordance with departmental and property policies, practices, and procedures. Specific Job Functions: Maintain proper inventory levels of wines, other beverages and supplies. Order supplies through the IP System and Purchasing. Eliminate waste by supervising employees on pour levels, proper storage, etc. Maintain appropriate beverage cost by managing purchasing and requisitions.
