POSITION SUMMARY

The Chef is responsible for executing meals that meet the high-quality food service expectations of the CMH guest. If you thrive in a remote setting, with access to high quality food ingredients to create culinary masterpieces with - and you love to ski - this unique chef opportunity may be for you.

ESSENTIAL DUTIES

Complete food orders, inventory controls and food rotations
Review, plan and coordinate menus with other members of the kitchen team
Oversee the preparation of all food and ensure that all items and recipes meet food safety and culinary excellence standards
Oversee and supervise the regular cleaning and upkeep of the kitchen and baking area
Prepare breakfast, lunch and dinner in coordination with other kitchen staff
Manage last minute changes
Deliver food items on time with effective and efficient time management
Respond to guest requests in an attentive and effective manner
Maintain a professional appearance and work area
Provide radio support in remote lodge environments

Safety/Regulatory/Sustainability:
Understand and abide by the OH&S and WHMIS standards and guidelines
Carry a valid Serving It Right certificate
Demonstrate safe workplace practices

EDUCATION & EXPERIENCE REQUIREMENTS

Education:
Diploma in culinary arts or a recognized culinary program
Red Seal Chef Certification or equivalent
Food Safe Certification

Experience:
5 years post-secondary education work experience with varied culinary exposure
Experience in menu planning which maximizes the use of fresh ingredients
Background in luxury hospitality or fine dining

Other Requirements:
Detail-oriented with the ability to work towards big picture goals and priorities
Excellent communication skills – able to receive and act on feedback in an effective manner

WORKING CONDITIONS

This job may be in a remote area of the BC wilderness or in a town-based lodge. Employees are required to find their own way to and from the lodge or helicopter staging area. Please specify in your cover letter which type of location you are most interested in.

This position has an 11 hour work day as a split shift.

Work Environment:
Able to lift, carry, or otherwise move and position a minimum of 20 pounds on an occasional basis
Manual dexterity to operate a computer and other common office equipment on a constant basis
Auditory and visual acuity to operate computers, phones, mobile devices and basic office equipment on a constant basis
