The Chelsea Soldiers’ Home is seeking a Cook I to cook food in quantities according to menu and number of persons to be served and adjust recipes as needed to produce required amounts. Oversee maintenance of physical food service areas (kitchen, storage areas, etc.) to be in compliance with sanitation and safety regulations. The Cook will report non-compliance to appropriate agency personnel (Maintenance, Engineering, Food Service Director) for repair and/or resolution. Assist Cook II in menu planning to ensure that menu items are attainable and personnel are available for proper preparation. Plan the use of food and supplies to best advantage to avoid shortages or waste. Discuss and plan with Cook II daily menu needs to ensure maintenance of service of appropriate quality and quantity of food to patients, dormitory residents and staff. Confer with other agency personnel and review menus to determine such matters as quantity of foods and types of ingredients to be issued, number of positions needed and substitute items to be used in order to insure the availability and efficient use of food and food supplies. Roast, fry, boil, broil and season meats, fish, poultry, vegetables and other food required for daily meals.

The Cook will measure and mix ingredients according to recipe using kitchen utensils and equipment in order to prepare soups, salads, desserts, gravies, dressings, sauces, stews, etc. Determine type or amount of ingredients which may be substituted in or omitted from recipes without altering taste, appearance or quality. Evaluate food quality, appearance, quantity, temperature and taste through observation and tasting in order to determine if it is fresh, properly portioned and prepared correctly. Operate and/or use kitchen equipment, such as, cutlery, grinders, and slicers to portion and/or prepare food for cooking. Perform related duties, such as, weighing portions of food to insure uniformity in serving, storing food at proper temperatures to prevent spoilage.

Schedule: Full-time; days off Tuesday and Wednesday.

Minimum Entrance Requirements:
Applicants must have at least (A) one year of full-time, or equivalent part-time, experience in the preparation and cooking of food in a hotel, restaurant, cafeteria, catering firm, government or private institution, or (B) any equivalent combination of the required experience and the substitutions below.

Substitutions: I. A diploma or certificate from a recognized trade, technical or vocational school, at high school level or higher, with a major in culinary arts, food services or food trades may be substituted for the required experience.
