The Watch Rooftop Restaurant is seeking a Kitchen Supervisor to lead and inspire our kitchen staff in a creative and inspiring way throughout food. The Kitchen Supervisor will be collaborating with Chef de Cuisine, and The Corporate Food and Beverage Director to optimize staff productivity, and stepping in to help wherever needed in the absence of the Chef de Cuisine.
To ensure success, you should have excellent leadership skills with experience managing a team of kitchen staff in a high-pressure and high-volume environment. We are looking for top candidates that are creative individuals with a passion for great food and excellent service.
Must be flexible and available for AM and PM shifts
Sous Chef Requirements:
- 3+ years of experience in a similar position.
- In-depth knowledge of food principles and best practices.
- Excellent communication skills and leadership qualities.
- Ability to thrive in a high-pressure environment.
- Creative and innovative thinking when it comes to seasonal menu changes.
- Exceptional standards for cleanliness, health, and safety, also a DHEC Certification.
- Experience managing inventories, scheduling, and ordering.
- Available to work on-call, shifts, after hours, over weekends, and on holidays.
- Train new cooks and apprentices in proper cooking techniques, knife skills, sanitation, and proper handling of foods.
- Manage BOH staff operations to insure the consistency and quality of all menu items.
- Hire, train, and supervise staff of 25, including, receiver, dishwashers and cooks.
- Maintain strict HACCP controls and cleaning and sanitary standards, developing daily, weekly, and monthly cleaning schedules.
- Supervise BOH staff at different venues and events, including weddings, private parties, corporate events, and VIP functions on property.
Skills
- Proven work experience as a Sous Chef or Cook
- Hands-on experience with various kitchen equipment
- Advanced knowledge of culinary, baking and pastry techniques
- Leadership skills
- Ability to remain calm and undertake various tasks
- Excellent time management abilities
- Up-to-date knowledge of cooking techniques and recipes
- Familiarity with sanitation regulations
- Culinary school diploma preferred
