Summary:
L'Antica aims to provide its guests with new discoveries and old favorites to make for memorable evenings by leading and shaping cheese and meats culture for guests both experienced and new, and to make the learning process exciting and welcome, with guests leaving the restaurant loving cheese and specialty meats more.
The cheese and meats connoisseur is thoughtful and passionate about cheeses and meats, constantly keeping informed about new varieties and products, and has a natural ability to sell. The connoisseur provides the guests with patient, informative and welcoming service, knows the cheeses’ and meats’ stories, is knowledgeable in cheese and meats and wine pairings, and has the ability to explain flavors.
Duties and Responsibilities:
· Assist in curating and updating cheese and meats lists in coordination with the General Manager and Chef
· Maintain cheese and meats lists to be accurate, up to date and free of errors
· Recommend cheese and meat and wine pairings to guests, inform guests of cheese and meats varieties
· Prep, cut, present and serve cheeses and meats and accompanying products
· Work with management on restaurant budget and sales of cheese and meats
· Keep up to date on trends and newest releases, varieties, including artisan cheeses and meats
· Develop a training program for team members to improve their knowledge of cheese and meats and pairings
· Organize and manage tastings
· Review and ensure cheese and meats are stocked at all times
· Display cheeses and meats attractively and rotate products per quality
· Inform management when supplies are low and provides order list
· Receive and inventory product shipments
· Ensure cheese and meat cutting practices are being followed
· Maintain/care for cheese and meats in top condition in refrigerated and non-refrigerated environments, assist with reducing product waste
· Work with team to ensure products are sold well before their expiration date
· Maintain cleanliness of knives, cutting boards and work station
· Ensure compliance with food and health safety measures and regulations
· Provide excellent guest service
Qualifications:
· Must be 21 or older
· ACS certified cheese professional or willing to become certified
· Ability to work evenings and/or weekends and pre-scheduled events
· 1-2 years proven work experience as a cheese and meats connoisseur
· Familiar with equipment: scales, slicers, knives
· Demonstrated ability in knife handling, other cutting methods and safety procedures
· Practical knowledge of cutting and handling traditional cheese and meat varieties
· Proficient merchandising skills including planning and maintaining appealing displays
· Proficient wine, liquor and beer knowledge and ability to answer guest questions and make recommendations re: pairings
· Excellent knowledge of both cheese and meats production methods, places of origin, varieties, differences between sheep, cow and goat, cheeses, tradition and history
· Ability to describe flavor, texture of cheese and meats as well as different uses of cheese and meats
· Advanced ability to pair cheese and meats and beverage
· Ability to offer excellent customer service
· Passionate about cheese and meats
· Ability to travel occasionally to meet with cheese and meats producers and visit cheese and meats tasting events
