Role Description

The Core R&D Manager of R&D will be responsible for core products, with a focus on chicken, bringing the core menu strategies to life through all touch points including but not limited to; innovation, development, testing, validation and optimization of products. Will manage all phases of product development from ideation through launch and provide ingredient, process and related technical knowledge to support innovative solutions.

To be successful in this role this person should be curious, pragmatic, highly collaborative and comfortable working in a fast-paced environment. An ability to laugh, go with the flow, work hard and have fun is a must.

Required Core Competencies

Ability to partner with the Director and the VP of Research and Development to drive the overall core menu direction for the brand.
Extensive knowledge about ingredients and paper costs, development and innovation techniques. Utilize knowledge of scientific research principles, practices and protocols in research projects.

Job Responsibilities

Product Development

Lead the research, development and launch of assigned Core R&D projects which a strong poultry focus.
Appropriately scope the technical development and testing needs for each project.
Build a working knowledge of all production lines and the processes associated with assigned projects (poultry and ingredients). Understand the impact of these processes on the finished product.
Tapped into academia and poultry industry to bring forward trend and future insights, new technologies and application opportunities to support the menu strategy.
Develop and conduct internal and consumer sensory panels in coordination with the Research Manager.
Develop specifications and attribute measures to ensure long term scale of recipes and ingredients.
Review and authorize new or enhanced specifications and qualify supplier’s capability to meet design.
Deliver projects successfully against defined key metrics: brand, customer, operations and financial acceptance.

Program Management

Organize, track and maintain details on projects. Ability to manage multiple projects at once as assigned.
Manage all bench to commercialization objectives in a timely manner. Work collaboratively in cross functional teams to meet project deadlines and project metrics.
Restaurant process proficient with foresight into the impact of ingredient or process changes.
Build supplier partnerships by working in conjunction with Procurement and Total Quality to leverage and deliver quality ingredients.
Conduct preparation and presentations for Senior Leadership team and product showings.
Naturally curious, continuously learning, exploring, vetting and researching food and packaging ideas which relate to the business.

R&D experience, working within or for a franchise system a plus.
Demonstrated ability to manage multiple complex projects and initiatives simultaneously with a results-oriented approach. Skilled in time management and organization with excellent attention to detail.
Must enjoy working and collaborating with many different people.
Strong interpersonal, verbal and written communication skills with the ability to make clear, concise and convincing ingredient related recommendations.
Basic ability to make appropriate business judgment and recommendations independent of supervisor.
Computer proficiency (Office suites, internet, documentation control, Genesis a plus)
Must be familiar with USDA/FDA regulations and standards.
Travel will be up to 40%.
Education (or equivalent experience)

BS/MS degree in Food Science, Poultry Science, Animal Science or related field. With a minimum of 3 years of work experience in research and development within the food service industry.
