Wolfoods Food Services manages Summer Camp kitchens in New York, Wisconsin, North Carolina, New Hampshire, & Maine.
We are currently hiring for a Chef. This position will be responsible for all aspects of food production and service.
Facilitate the duties and responsibilities of creating, implementing and maintaining the culinary needs for the Camp Dining Program, providing the camp with clean, comfortable surroundings, ensuring correct timing, quantity and that the quality is accurately provided for all meal periods and special requests.
Head Chef must have the ability to manage in a diverse camp kitchen environment with a focus on customer service being essential to the success of this role. This position requires an outgoing personality, a sense of urgency and willingness to engage with both front and back of the house staff, camp directors, managers, leaders, specialists and diners. Able to answer all food and service related questions in accordance the Wolfoods standards of service guidelines.
The head Chef directly supervises kitchen personnel train and manage kitchen personnel while supervising and coordinating all related culinary activities; estimate food consumption and requisition of purchase food, follow SOP recipes to ensure consistent quality, standardize new recipes that meet the needs of the camp, establish presentation technique and quality standards, ensure proper equipment operation/maintenance, ensure proper safety and sanitation in the kitchen.
Desired Skills & Experience:
Precisely follow the Woolfoods comprehensive Camp Food Training Program
Attend related in-service training, and staff meetings as required
Determine how food should be presented by following the Wolfoods Menu Production Charts
Determine production schedules and staff requirements necessary to ensure timely delivery of services.
Forecast and Track quantities and costs of required supplies, such as food and disposables.
Inspect supplies, equipment and work areas to ensure conformance to established standards
Instruct cooks and other workers in the quantities, preparation, cooking and presentation of food
Monitor sanitation practices to ensure that employees follow standards and regulations.
Order or requisition food and other supplies needed to ensure an efficient operation
Schedule menu items two weeks out –
Schedule menu items so that “left overs” can be utilized correctly.
Meet with camp directors to discuss special needs and quality updates
Prepare and cook food for special diets; special requests and special occasions.
Supervise and coordinate activities of cooks and workers engaged in food preparation
Meet with Food Service Director on a regular basis to discuss service, general upkeep, staffing issues and food in general.
Check the quality of raw and cooked food products to ensure that standards are met
Check the quantity and quality of received products
Record production and operational data on specified forms

2+ years High Volume Commercial Kitchen Experience
