Head Brewer Job Description

Summary of Position:
The Head Brewer is responsible for brewing beer and managing the brewery to meet ownerships expectations and business needs. The Head Brewer is responsible for everything brewery related. He is responsible for meeting production goals, upholding quality standards, maintaining and
training staff, educating guests, and maintaining a clean and positive work environment. The Head Brewer must create positive energy and building staff morale. The Head Brewer is the face of brewery operations.

Duties & Responsibilities:
Brew delicious beer
Live the brand and be a brand ambassador
Work a minimum of 50-60 hours per week
On call at all times for troubleshooting needs or to complete work as needed
Meet ownership’s expectations for the brewery and brewed products
Manage a high quality, efficient brewery operation to meet department deliverables
Train employees on execution of brewery operations
Create, write, and update SOP’s as needed
Flavor profile, check, and taste all standard and one off brews throughout the brewing, fermentation, and serving process
Provide expert knowledge of the brewing process, recipe formulation, and ingredients with an ability to troubleshoot quality and production issues
Provide expert knowledge and understanding of brewery equipment including maintenance and repair
Effectively communicate all brewery happenings with restaurant team and management
Engage, educate, and promote brewed products to restaurant guests and staff.
Be an expert on all things brewery related
Occasional representation of brewery operations at tradeshows or beer festivals as needed
Keep inventory of brewed and served brewery products
Keep inventory of hops and malt
Prepare and deliver DE state beverage tax paperwork to accounting monthly
Prepare and deliver federal taxes paperwork to accounting quarterly
Maintain and deliver wastewater usage paperwork to County Clerk quarterly
Create and update brewing and staffing scheduling
Highlight areas in need of improvement to owners
Implement new techniques or working of new equipment
Working with Sales to schedule canning operations and needs
Recipe formulation
Work with restaurant management and owners to schedule and price any major brewery upgrades or maintenance
Continuous tweaking of recipes to ensure efficient usage of ingredients
Create a safe, clean, organized, and healthy work environment in the brewery
Make employment and termination decisions including interviewing, hiring, evaluating and disciplining brewery personnel as appropriate.
Provide orientation of company and department rules, policies and procedures and oversee training of new brewery employees.
Prepare all required paperwork, including forms, reports and schedules in an organized and timely manner.
Ensure that all equipment is kept clean and kept in excellent working condition through personal inspection and by following the restaurant’s preventative maintenance programs.
Work with restaurant managers to plan and price brewery offerings.
Ensure that all ingredients and products are ordered according to predetermined product specifications, cost, and received in correct unit count and condition and deliveries are performed in accordance with the restaurant’s receiving policies and procedures.
Control beer cost by brewing, storing, and serving beer to company standards
Oversee and ensure that restaurant policies on employee performance appraisals are followed and completed on a timely basis.
Schedule labor as required by anticipated business activity while ensuring that all positions are staffed when and as needed and labor cost objectives are met.
Be knowledgeable of restaurant policies regarding personnel and administer prompt, fair and consistent corrective action for any and all violations of company policies, rules and procedures.
Oversee the training of brewery personnel and safe operation of all brewery equipment.
  • Train all personnel in brewery cleanliness and sanitation practices.
Maintain appropriate cleaning schedules for floors, brewhouse, brewery, tanks, mill room, walk-in cooler, other brewing equipment, indoor and outdoor storage and brewing related areas.
Check and maintain proper beer holding and serving temperature
Attend all coordination meetings with management and General Manager to ensure clear communication on brewery operations]
Make decisions in the best interest of the restaurant, brewery, and business at alltimes

A minimum of 7-10 years of experience in brewing in a production or pub brewing environment
At least 6 months experience in a leadership role
Must be able to communicate clearly with managers, kitchen and dining room
personnel and guests.
Proficiency in computer usage, record keeping, and filing
Minimal quality assurance or compliance training
Minimal understanding of water piping and volume flow
Minimal understanding of electrical components and simple mechanics
Minimal understanding of brewing equipment blueprints and schematics
Minimal understanding of glycol or cooling systems, flow, and maintenance
Completed flavor or sensory training
Be able to reach, bend, stoop and frequently lift up to 55 pounds.
Be able to work in a standing position for long periods of time
