Osteria Fiorella’s kitchen opened in 2020, amidst very hard times of Covid and has exceled as one of Summerlin’s favorite local Italian spots. From handcrafted pasta recipes stemming from over 25 years ago, to fresh bread and desserts our food is comforting and memorable. Coast to coast we have a reputation for using quality ingredients and creating simple dishes with complex flavors.
We are looking for a sous chef who wants growth and development in their career. Someone with experience in ordering, inventory and organizational skills is what we are seeking to complete our culinary team.

A Philadelphia native, Marc Vetri opened the storied restaurant in 1998 with his business partner, Jeff Benjamin. Within two years of Vetri Cucina’s debut, Marc was named one of Food & Wine's “Best New Chefs” and received the Philadelphia Inquirer's highest restaurant rating. In 2005, Marc received the James Beard Award for "Best Chef Mid-Atlantic."
Following years of accolades at Vetri, Marc and Jeff opened Osteria, Amis, Pizzeria Vetri, Lo Spiedo and Alla Spina, all of which played integral roles in Philadelphia’s restaurant resurgence.
Vetri Cucina received renewed acclaim in 2017, maintaining its esteemed “Four Bell” rating with the Philadelphia Inquirer and earning a spot on AAA’s exclusive list of Five Diamond Restaurants.
Moving West to Vegas in 2018 and opening Vetri Cucina Las Vegas, located at the Palms Casino, Osteria Fiorella in 2020 at Red Rock Resort and coming soon to Durango Casino, Fiorella Pasta Bar in 2023.
What we require
- Proven success as a Sous Chef, Executive Sous Chef, or Kitchen Manager in a high-volume upscale restaurant or high-end resort restaurant
- Experience with ordering
- Organizational skills regarding inventory
- Organizational skills regarding product
- Experience creating schedules and systems
- Proven ability to develop a team
- Willingness to learn of systems, methods, and processes that contribute to great execution
- Stable job history which demonstrates upward career progression
- Encouraging the team to be better and push themselves
