As a Head Chef at China Mama, you'll play a vital role in ensuring the seamless operations of our kitchen while upholding the highest standards of culinary artistry. Your responsibilities include:
- Assisting the chef in overseeing all food service operations and day-to-day kitchen activities.
- Providing clear direction to kitchen staff, ensuring the precise execution of all employee duties.
- Monitoring kitchen operations to ensure strict compliance with health, fire department regulations, and food handling standards.
- Managing implementation and adherence to kitchen and restaurant policies and procedures during your scheduled shifts.
- Performing line cook duties as required and having the ability to proficiently perform tasks of all kitchen positions.
- Safeguarding product quality by ensuring correct storage temperatures and maintaining updated recipe books with menu items, portions, and ingredients.
- Utilizing daily prep sheets and yield sheets while participating in monthly inventory processes.
- Proactively addressing inventory, system, and staffing issues to ensure smooth operations.
- Managing labor costs within budgeted goals and restaurant policies.
- Overseeing and endorsing the training and development of kitchen staff, fostering a collaborative team spirit.
- Participating in the hiring process by conducting interviews and offering valuable hiring recommendations.
- Assisting in the completion of employee reviews and evaluations.
