REPORTS TO: General Manager at McCormick Place
FLSA STATUS: Salaried-Exempt
SALARY RANGE: $60-70k annually

Savor...Chicago, a leading provider of food and beverage services at sports, entertainment and convention facilities has an excellent and immediate opening for a Director of Food and Beverage for Wintrust Arena. The Director will direct and coordinate the entire food and beverage operation at Wintrust Arena.

Markets Food and Beverage services to clients and establishes Food and Beverage control
Creates Food and Beverage sales projections and budgets for events
Develops event work plans including scheduling and ordering, and assigns appropriate duties to subordinates
Reviews food and beverage lists submitted by each facility manager to determine that sufficient items are ordered weekly
Directly oversees all Concession Food & Beverage operation
Oversees Food and Beverage operations during event to ensure client satisfaction.
Maintains cost and quality control standards
Inspects food service facilities to ensure that equipment and buildings meet requirements of state and local health laws and internal regulations
Analyzes information concerning facility operation such as daily food sales, patron attendance, and labor costs to prepare budget and to maintain cost control of facility operations
Inspects and tastes prepared foods to maintain quality standards and sanitation regulations.
Establishes Beverage and operational needs for assigned Banquet events
Develops work plans including scheduling all alcohol service employees for each function and ordering; assigns appropriate duties to subordinates
Standsheet reconciliation for inventory controls
Must be knowledgeable of State and Local Alcohol ordinances and the implementation of these ordinances
Ensure compliance with Illinois liquor laws and SAVOR liquor polices
Other duties may be assigned

Supervisory Responsibilities

Manages subordinate Premium (Suites & Catering), Concessions, and Chef/Kitchen Supervisors. Is responsible for the overall direction, coordination, and evaluation of any of these units. Carries out supervisory responsibilities in accordance with SMG's policies and applicable laws. Responsibilities include interviewing, hiring, and training employees; planning, assigning, and directing work; appraising performance; rewarding; disciplining employees in conjunction with Human Resources; addressing complaints and resolving problems.

Bachelor's Degree in Food & Beverage Management or related field desired
Minimum 3-5 years' experience in management level position in Food & Beverage or equivalent training experience
Arena or Stadium experience preferred
Experience working with union employees and understanding Collective Bargaining Agreement preferred
Proven abilities to lead and develop staff
Ability to take tasks that are not clearly defined and appropriately define problem, propose and implement solutions
Strong computer skills (i.e. Word, Excel, PowerPoint, Access)
Must be flexible, have a sense of urgency, be able to respond quickly and resourcefully to internal and external issues
ServSafe and TIPS/BASSET certified
