Ayrshire Farm Management, LC, a company that promotes the well being of people, animals and the environment through responsible farming practices and wholesome food, is seeking a skilled, experienced full-time Meat Cutter for its USDA inspected slaughterhouse in Winchester, Virginia. Experience Required:
Minimum of 4 years experience preparing and cutting carcasses
Experience in the use of knives, saws and other hand tools
Knowledge of beef and/or pork anatomy
Duties include, but are not limited to:
Skin sections of animals or whole animals
Slit open, eviscerate, and trim carcasses of slaughtered animals
Cut, trim, skin, sort, and wash viscera of slaughtered animals to separate edible portions from offal
Saw, split, or scribe carcasses into smaller portions to facilitate handling
Remove bones
Cut meat into standard cuts and or to specification
Wrap dressed carcasses or meat cuts
Other tasks as assigned
Complete duties as per USDA regulations
Ensure excellent cleanup of facility after operations
Knowledge of Certified Organic, Certified Humane® meats, and knowledge of HACCP process are a plus but training will be provided for the right candidate.
