Assists in leading and managing the operations of one or more Yale dining units. Assists in providing leadership to ensure excellence and high quality food hospitality standards are successfully implemented at assigned dining facilities.
1. Assists in managing the planning, preparation, production and delivery of meals in Yale residential operations on a daily basis in compliance with established university and departmental policies and procedures. 2. Assists in managing, supervising, and coordinating the activities of residential staff, consisting of a culinary team, general service assistants, specialty retail workers, student workers, casual employees, and other Yale Dining employees, as assigned. 3. Facilitates along with the General Manager, local Joint Departmental Committee (JDC), weekly staff meetings, ongoing training, guidance and direction to staff members to include work rules, practical functions, customer service and operational excellence. When/if necessary follow up with progressive coaching, counseling and disciplinary process. 4. Develops and manages the staffing requirements for efficient daily operational needs of one or more residential dining facilities. 5. Ensures overall quality assurance for products and food served; manages the planning, ordering and merchandising of products, including product rotation and inventory while fiscally responsible. 6. Assists in managing catered and special events to include quality assurance both in food and service; determines costs, compiles and submits billing information in accordance with Yale Dining policy. 7. Utilizes standardized recipe files and adheres to menu management guidelines; may research and/or assist chefs in creation and development of menu concepts and items. 8. Assists in managing the operating budget for assigned unit(s) and provides weekly updates; produces and maintains operational and other business reporting as required. 9. Responsible for attendance and weekly payroll for all employees; including the execution of disciplinary action based on attendance guidelines. May monitor and report casual labor usage, as required. 10. Trains staff in customer service skills as related to the operation; trouble shoots and problem solves accordingly. 11. Maintains excellent customer relations with masters, faculty, staff, students, departments, and internal and external clients. 12. Coordinates with other university departments such as, facilities, police and security, access control, and other departments as needed or required. 13. Assists in managing strict adherence to sanitation policies and safety procedures as well as proper food handling procedures. 14. Maintains working knowledge of production equipment; troubleshoots and schedules repairs in a timely manner. 15. May perform other duties as assigned.
Required Education and Experience
Bachelor’s Degree and one year of related work experience or an equivalent combination of education and experience.

Sustained standing and frequent bending. Moves, lifts and carries supplies, equipment, and materials weighing up to 25 pounds without assistance from floor to waist height and 20 pounds to shoulder height. Carries supplies up or down stairs if necessary. Works in confined areas with wide temperature variations. Lifts items above shoulder height.
