JOB DESCRIPTION TITLE: Culinary Arts Instructor, LRTCREPORTS TO: Director, LEWISTON REGIONAL TECHNICAL CENTERJOB GOAL: The instructor is responsible for implementing an instructional foods program that willestablish the development of the students' skills in Culinary Arts. Students will be trained in the use ofprofessional kitchen equipment, food, beverage, and professional cookery, sanitation and professionalFood Service Management.QUALIFICATIONS: 1. Minimum of three years previous successful experience in a food service setting as an executive chefor comparable occupation2. Experience in catering for large groups3.
Certified in Serv-Safe safety and sanitation4. Associates Degree, Bachelors preferred5. Career & Technical Education , Culinary Arts Teacher (891) Maine Department of Education6. Teaching and food service supervisory experience preferredPERFORMANCE RESPONSIBILITIES: 1.
Willingness to work beyond regular school hours2. Responsible for teaching Serv-Safe and sanitation.3. Responsible for teaching students about, supplies, pricing, menu planning, safety, and sanitationissues that arise in the restaurant business.4. Responsible for teaching students about culinary terminology, food cuisines, meat, fish and poultryfabrication and general food knowledge.5.
Responsible for teaching students food preparation and bakery production, and the overall structureand work flow of a kitchen to include: a. Nutrition b. Purchasing c. Receiving d.
Inventory e. Storing foodin accordance with health standards f. Proper preparation techniques6. Responsible for teaching students about supplies and equipment used in the culinary arts field.7.
Responsible for teaching students about quality and cost containment standards.8. Inform students of career opportunities in and related to the field of Culinary Arts.9. Provide a work based learning environment, including a lab setting.10. Evaluate and grade students' class work, assignments, and papers.
Compile, administer, and gradeexaminations.11. Prepare course materials such as syllabi, homework assignments, and handouts based on nationaland State of Maine standards.12. Maintain student attendance records, grades, and other required records. Initiate, facilitate, andmoderate classroom discussions.13.
Keep abreast of developments in their field by reading current literature, conduct program advisorymeetings, and participating in professional organizations, coursework and conferences.14. Advise students on academic and vocational curricula, and on career issues.15. Collaborate with colleagues.16. Participate in student recruitment, registration, and placement activities.17.
Serve on academic or administrative committees that deal with institutional policies, departmentalmatters, and academic issues.18. Participate in school and community events.19. Adhere to IEPs and differentiated instruction.20. Perform all other related duties as assigned by the Director of LRTC.TERMS OF EMPLOYMENT: Per negotiated Lewiston Education Association agreementEvaluation: Performance for this position will be evaluated annually by the Director based on the roledescription and on goals established on a yearly basis.
