The Director of Culinary Services directly oversees all Food and Beverage operations at Dollywood Theme Park, and is responsible for the consistent delivery of the brand experience as it relates to Guests’ culinary experience. This role is expected to achieve all financial targets and business metrics. Working in concert with department leadership, this role will ensure all shareholder objectives are met for the department, in a manner consistent with the mission, values, operating philosophies and standards of The Dollywood Company.
Summary of Major Duties & Responsibilities
Develop and implement department specific business plans that ensure coordination with the Dollywood Company brand initiatives, vision, mission, standards and goals.
Serve as a true “product and experience” minded Culinary Subject Matter Expert utilizing strong business and financial analytical skills, and accustomed to achieving a balance across Guest experience, financial and organizational goals
Build strong relationships and collaborate with Property Support Center culinary leadership to ensure company expectations are achieved
Develop and implement Culinary Team financial budgets to support business plans
Assure profitability of Culinary Team by closely monitoring and making business decision to positively impact sales, cost of goods, inventory and labor
Ensure leaders are controlling staffing and labor expenses for their respective business units. Maintain a close eye on Host retention and Host experience in each business unit.
Develop and implement plans to properly train and equip all Hosts to perform their job responsibilities.
Ensure, promote and regularly reinforce effective business process management.
Establish and clearly articulate all performance standards, and constantly monitor all results to ensure that expectations are being met.
Focus on key attributes that drive Net Promotor Scores
Develop and implement an entrepreneurial spirit by making recommendations targeting increased sales, profits, Guest service and Host satisfaction
Develop the Team’s Leadership to ensure growth, build a strong bench strength, coach, inspire, empower, provide feedback, and ensure accountability to reach Culinary Team goals and career objectives.
Develops and implements plans to ensure a Great Place to Work for Great People, by modeling “GP6” behavior, and ensuring a positive work environment for all Hosts as shown through high levels of Host engagement.
Ensure compliance with all federal, state, local, and company regulations, policies and procedures.
Build strong relationships and collaborate with department leaders and managers to ensure clarity and consistency in their stewardship of respective responsibilities.
Routinely serve as Dollywood Park Host-in-charge
Direct and oversee culinary service operations in Dollywood Theme Park including catering, facilities, department purchasing and warehouse functions.
Develop and implement a Culinary Team safety program that complies with all respective safety requirements. This includes but is not limited to, representation at safety committee meetings, complete and accurate daily temp logs, food handling and storage, product labeling, monthly safety audits, safety critical Host training, chemical introduction, etc.
Develop and implement new and creative food concepts that keep pace with or lead business and industry trends.
Participate and provide input to long-range planning for continued net profit growth for all culinary operations, collaborating with supporting teams for success.
Develop and implement a Culinary Capex, from concept through completion, on budget and on time.

Minimum 10 years Culinary / Food & Beverage Management experience with no less than $3M in annual gross sales required. Experience in the theme park, tourism, hospitality or entertainment industry preferred.
College degree required. Degree in Culinary, Food Service Management, or Hospitality preferred. Extensive practical experience would be considered in lieu of educational degrees.
Minimum 21 years of age.
Proven track record of business acumen with strategic ability and customer centric thinking
Proven track record of successfully developing teams and individuals.
Working knowledge of common office software such as word processing, presentation design, and spreadsheet software required.
Must successfully pass a post-employment offer background check and drug test
Must have, or have the ability to obtain, a TN driver’s license and state required auto insurance.
