Full Job Description

WA SHIN BOH Omakase Fine Dining Assistant Sushi Chef / Sushi Helper

We are seeking a dedicated and detail-oriented Fine Dining Assistant Sushi Chefto join our Omakase team. The ideal candidate will have experience in high-end dining, focusing on station prep (fish filleting, rice preparation), maintaining strict sanitation (DOH compliance), and supporting the Lead Chef during service. The role requires strong knife skills, attention to detail, station management, and professional guest interaction in an intimate setting, to ensure the highest quality of fish preparation and a superior guest experience.

Preferred Qualifications:

Highly preferred Japanese sushi restaurant experience or knowledge; preferably Omakase or high-end environment
Detail-oriented, organized, observant, coachable, ability to multitask, excel at working in a cross-functional team
Familiarity with Japanese culinary terminology and culture
Japanese-speaking candidates preferred
Experience making traditional sushi rice (shari)
Skills: Exceptional knife skills and knowledge of Japanese raw fish handling
Certifications: Active Food Handler’s Certificate

Key Responsibilities:

Station Prep & Setup: Set up sushi stations, prepare fish (cleaning, filleting), create garnishes, and manage inventory/stocking
Service Assistance: Assist the Head Chef during service by plating dishes, passing items, and managing rice quality
Sanitation & Quality Control: Maintain strict cleanliness standards (DOH/OSHA) and ensure proper food rotation and storage temperatures
Guest Interaction: Greet guests, explain dishes when necessary, and provide attentive service in an Omakase setting
Team Support: Support fellow team members and clean stations/equipment at the end of the shift

Requirements:

Physical: Ability to stand for long periods and lift up to 50 lbs
Attributes: Strong communication skills, professional demeanor, and a proactive attitude
Ensure that all food products are prepped to perfection per Wa Shin recipes and standards, with careful attention to any special dietary restrictions or approved special requests
The ability to adapt to a fast-paced and challenging work environment
The ability to approach their work with a sense of ownership and work with a sense of urgency
The ability to perform essential job functions under pressure and maintain professionalism when under stress
The ability to work nights, weekends and holidays, and a variable schedule, per the needs of the business
Must be eligible to work in the United States
