Help shape the bread program at a brand-new bakehouse. Glykos is an artisan bakehouse opening this July in Bloomfield Hills, and we're looking for a skilled Bread Baker to join our founding team. This is a chance to build something from the ground up — your hands will be on the bread that defines our opening menu.
What you'll do:
- Mix, ferment, and prepare doughs to recipe specifications (hydration, timing, temperature)
- Shape loaves, boules, baguettes, and other bread styles by hand
- Score loaves with precision for proper expansion and signature presentation
- Bake breads to correct color, crust, and crumb using deck or convection ovens
- Monitor proofing and fermentation throughout the day, adjusting for temperature and humidity
- Maintain consistency and quality across batches
- Keep bread station, tools, and equipment clean and organized
- Manage daily production schedule to meet opening and retail case timing
- Collaborate with the pastry chef and kitchen team on overall production flow
What we're looking for:
- Experience working with artisan or naturally leavened breads (sourdough experience a strong plus)
- Comfortable with hand-shaping and scoring techniques
- Understanding of fermentation, proofing, and oven management
- Early-morning availability — bread waits for no one
- Strong time-management skills in a fast-paced production environment
- A genuine passion for the craft of bread baking
