Certified Dietary Manager
Onalaska, WI
Schedule: Full-time, primarily daytime shifts; occasional evenings, weekends and holidays required License/Cert: Certified Dietary Manager (CDM) required or ability to obtain within [timeframe, e.g., 6 months]
Primary Responsibilities
Oversee all dietary operations for the nursing home, ensuring compliance with federal, state and local regulations.
Manage food production, portion control, dietary substitutions, sanitation and food safety.
Supervise, hire, train and schedule dietary staff; conduct performance evaluations.
Monitor and maintain dietary budgets, purchasing, inventory and cost control.
Coordinate with clinical team regarding diet orders, texture modifications and feeding/weight concerns.
Maintain accurate records (menu cycles, production sheets, resident dietary profiles, training logs).
Participate in QAPI activities, surveys and meetings as needed
Qualifications
Certified Dietary Manager (CDM) required OR candidate must be eligible and obtain CDM within 6 months of hire.
Prior supervisory experience in long-term care, skilled nursing, or large-volume foodservice preferred.
Knowledge of therapeutic diets, texture-modified diets and state/federal long-term care dietary regulations.
Strong leadership, communication and organizational skills; basic computer proficiency.
Current Food Handler/ServSafe certification (or obtain upon hire).
Ability to work occasional weekends, evenings and holidays.
