Job Summary
The Bakery Production Manager is responsible for the overall leadership, performance, and day-to-day operation of the bakery production department supporting multiple locations. This role oversees Pie, Pastry, AM Bake & Kitchen and is responsible for establishing production priorities, standards, processes, staffing needs, and expectations for the department.
The Bakery Production Manager directly oversees the Assistant Managers assigned to Pie & Pastry and AM Bake & Kitchen staff and provides direction and oversight for the Leads and hourly bakery production teams. Assistant Managers are responsible for managing the day-to-day operations of their assigned area while on shift and carrying out the direction and standards established by the Bakery Production Manager.
This position is responsible for production planning, staffing, scheduling, labor management, food safety, inventory, quality control, training, performance management, and process improvement across the bakery department. The Bakery Production Manager works closely with the Assistant Managers and Leads to ensure production is completed safely, efficiently, consistently, and on schedule.
The Bakery Production Manager is accountable for the overall performance of the bakery production department, including preparing for seasonal and high-volume production, maintaining product quality and consistency, managing department resources, addressing operational issues, and ensuring all locations receive fresh products on time.
Daily Responsibilities and Tasks
- Lead daily bakery production and oversee production across Pie & Pastry and AM Bake & Kitchen.
- Direct and oversee the Assistant Managers and provide clear expectations for daily operations, production, staffing, and quality.
- Establish production schedules and staffing needs based on business volume and production
Requirements
- Manage department labor, productivity, and production costs.
- Supervise, coach, and develop Assistant Managers and bakery leadership.
- Oversee hiring, training, performance management, and employment decisions for bakery employees.
- Ensure recipes, portioning, preparation, and quality standards are consistently followed.
- Ensure food safety, sanitation, and health department standards are maintained.
- Manage inventory, ingredient purchasing, waste, and production supplies.
- Oversee equipment maintenance and coordinate repairs as needed.
- Monitor production and product quality and address operational issues.
- Plan for seasonal demand, holidays, new products, and changes in production volume.
- Identify and implement improvements to production processes, workflow, and efficiency.
- Communicate department priorities, standards, and operational changes to Assistant Managers and Leads.

Required Education, Certification, or Experience
- High school diploma or equivalent required.
- Food Manager Certification required or ability to obtain within 30 days.
- 3-5 years of bakery, kitchen, or food production leadership experience preferred.
- Previous management or supervisory experience required.
- Experience managing production scheduling, inventory, and labor costs preferred.
Physical Requirements and Schedule
- Ability to stand and walk for the duration of the shift.
- Ability to lift, carry, push, or pull up to 50 pounds.
- Ability to bend, reach, twist, and perform repetitive movements.
- Comfortable working around ovens, mixers, refrigeration areas, and bakery equipment.
- Ability to work in a fast-paced production environment for extended periods.
- Regular Bakery Schedule: Monday - Sunday, 6:00am - 2:00pm, working 5 days per week
- Schedule may vary based on production needs, business volume, and seasonal demands.
- Holidays are a critical production period, and availability during peak holiday seasons is required.
- Additional hours or schedule adjustments may be needed during high-volume periods.
Compensation and Benefits
- $60,000 - $75,000, based on experience
- $300 contribution toward WRC medical insurance premiums
