Position Summary
The Butcher is responsible for the fabrication, breakdown, and preparation of all meats, poultry, and select proteins according to the restaurant’s standards of quality, yield, and consistency. This role supports the culinary team by ensuring all protein products are properly broken down, portioned, stored, and prepared for service while maintaining the highest levels of food safety, sanitation, and organization.
Reports To: Chef de Cuisine
Core Responsibilities
- Break down whole proteins including meats, poultry, and other butchery items according to restaurant specifications.
- Portion, trim, and prepare proteins for service with accuracy, consistency, and attention to yield.
- Prepare and maintain butchery mise-en-place for all kitchen stations as needed.
- Label, store, rotate, and organize all products following FIFO and food safety standards.
- Maintain cleanliness and organization of all butcher stations, walk-ins, tools, and equipment.
- Assist with receiving and properly storing protein deliveries.
- Uphold all Department of Health, sanitation, and food safety regulations at all times.
- Support additional prep and kitchen needs as assigned by the Chef team.
Service & Guest Experience
- Ensure consistent, high-quality protein preparation that directly supports the execution and presentation of dishes.
- Work with precision, efficiency, and respect for product to maintain the highest culinary standards.
- Collaborate with the culinary team to ensure seamless service flow and station readiness.
- Contribute to a clean, organized, and professional kitchen environment that reflects excellence and care in execution.
Qualifications:
- Minimum of 2 years of butchering experience
- Strong organizational skills and self-motivation.
- Excellent attention to detail and ability to work cleanly and efficiently.
- Ability to work successfully within a team-oriented environment.
- Ability to stand and walk for extended periods (8+ hours), and to crouch, bend, and lift or move 25+ lbs, with or without reasonable accommodation
Salary: $20 per hour
