Taisho Japanese Restaurant & Bar is seeking a skilled and motivated Jr. Sushi Chef to join our culinary team. This position is ideal for someone with prior sushi or Japanese kitchen experience who is looking to continue developing their craft in a high-energy, guest-focused restaurant environment.
The Jr. Sushi Chef plays an important role in the preparation and execution of sushi and cold station items while maintaining the quality, consistency, cleanliness, and presentation standards that define the Taisho experience. Key Responsibilities
- Prepare sushi rice, fish, sauces, vegetables, garnishes, and other ingredients according to company standards
- Prepare sushi rolls, sashimi, hand rolls, nigiri, appetizers, and other cold station items with consistency and attention to presentation
- Properly handle and store seafood and other perishable products while maintaining all food safety and sanitation standards
- Maintain cleanliness, organization, and readiness of the sushi station throughout service
- Assist with inventory organization, product rotation, labeling, and stock management
- Execute prep work efficiently and accurately while maintaining quality standards during high-volume service
- Communicate effectively with chefs, kitchen team members, and front of house staff to support smooth operations
- Follow all recipes, portion standards, and kitchen procedures
- Support opening duties, closing duties, and side work assignments as needed
- Contribute positively to a professional, respectful, and team-oriented kitchen culture
Qualifications & Skills
- 1–2 years of sushi, Japanese cuisine, or relevant kitchen experience preferred
- Basic knowledge of sushi preparation techniques, knife skills, and seafood handling
- Ability to work cleanly, efficiently, and with a strong sense of urgency
- Strong attention to detail, consistency, and presentation
- Ability to work well under pressure in a fast-paced environment
- Dependable, professional, and team-oriented mindset
- Flexible schedule availability including evenings, weekends, and holidays
- Ability to stand for extended periods and lift up to 40 pounds
- CA Food Handler Card required

Pay: $17.87 - $20.00 per hour
