Kitchen Manager Job Description
Position Overview
This is a hands-on Kitchen Manager position designed for a skilled culinarian ready to take the next step in their career. As management transitions into the Clubhouse Manager role, leadership will remain closely involved to provide comprehensive, one-on-one training and mentorship. This role balances daily kitchen execution with vital administrative duties, including inventory management, staff scheduling, menu development, pricing, and creating weekly/monthly specials.
Key Responsibilities & Duties
Food Preparation & Execution
- Follows recipes as instructed and follows proper procedures to cook all foods to club standards.
- Ensures that all foods are prepared within allotted club standards, while maintaining freshness and appropriate temperatures.
- Ensures that all foods are attractively presented as per club standards.
- Responsible for proper food storage including covering, labeling, and dating all items, and placing in appropriate locations of food storage areas.
- Ensures safe food handling techniques at all times.
Menu Development, Pricing & Specials
- Collaborates directly with management to brainstorm, test, and develop new seasonal menus and core offerings.
- Takes ownership of designing, prepping, and executing creative weekly and monthly specials utilizing seasonal ingredients.
- Assists in calculating recipe yields, portion costs, and menu item pricing to ensure profitability while meeting club value standards.
Inventory & Scheduling Operations
- Manages routine inventory counts, stock rotation, and tracking of food supplies to minimize waste and control food costs.
- Coordinates staff schedules and contributes to operational planning, with direct guidance, training, and ongoing support from management during the transition period.
Kitchen Cleaning
- Responsible for cleaning and sanitizing their work areas and equipment before and after each use.
- Ensures that all kitchen surfaces including floors, counters, sinks, cabinets, freezer, and refrigerator remain clean and sanitary.
Education and Experience Requirements
- High school diploma or equivalent.
- Formal culinary training can be helpful.
- Proven kitchen experience with a strong foundational knowledge of cooking techniques and line operations.
- An eagerness to learn kitchen administration, including inventory control, scheduling, menu planning, and pricing (full hands-on training provided by management).
