Position Summary
The Prep Cook / Dishwasher plays a dual role essential to the daily operation of the kitchen. This position is responsible for executing morning and afternoon food preparation to precise recipe standards, while simultaneously managing the dish station to keep the line stocked with clean equipment, smallwares, and utensils. Success in this role requires speed, efficiency, and the ability to switch tasks fluidly in a fast-paced kitchen environment.
Key ResponsibilitiesFood Preparation
- Prepare raw ingredients, including washing, peeling, and cutting vegetables to exact size specifications.
- Mix proprietary batters, sauces, and marinades according to strict corporate recipe guidelines and portion controls.
- Portion, label, and date all prepped items in compliance with FIFO (First In, First Out) inventory rotation.
- Monitor prep levels throughout the shift to ensure line cooks are fully stocked for peak service windows.
Dishwashing & Sanitation
- Operate and maintain commercial dishwashing machinery and three-compartment sinks according to safety standards.
- Scrape, wash, sanitize, and properly air-dry all pots, pans, mixing bowls, utensils, and service ware.
- Promptly return clean equipment to its designated storage locations to prevent bottlenecks on the line.
- Break down boxes, empty kitchen trash cans, and transport waste to the outdoor dumpster regularly.
Kitchen Safety & Maintenance
- Maintain a clean, organized, and dry work station in both the prep and dish areas.
- Sweep and mop kitchen floors, clean floor drains, and sanitize high-touch surfaces throughout the shift.
- Adhere strictly to local health department guidelines, food safety protocols, and chemical handling procedures.
Qualifications & Physical Requirements
- Experience: Previous experience in a kitchen prep or dishwashing role preferred, but not required; a strong work ethic and willingness to learn are essential.
- Pace: Ability to work efficiently under time constraints and adapt to changing priorities during high-volume rushes.
- Stamina: Ability to stand, walk, bend, and reach continuously for shifts lasting up to 8 hours.
- Strength: Ability to safely lift, push, pull, and carry items weighing up to 40 lbs frequently (e.g., bags of flour, cases of produce, heavy trash bins).
- Environment: Comfortable working in a hot, humid, and wet environment, frequently interacting with water and cleaning chemicals.
- Reliability: Consistent punctuality and dependable transportation to the Franklin Farm location.
Pay: From $14.00 per hour
