Mike’s Red Tacos is seeking an experienced, hands-on General Manager to oversee restaurant operations and lead the team.
The General Manager is responsible for consistent execution and measurable results across front-of-house, back-of-house, and prep. This includes team performance, guest experience, food quality, sales, labor, food cost, inventory, and compliance.
We are looking for a visible, accountable leader who develops people, maintains high standards, and takes action when performance falls short.
Job Responsibilities
- Take full ownership of daily operations and results across front-of-house, back-of-house, and prep.
- Own the overall guest experience by setting and maintaining high standards for service, hospitality, accuracy, speed, and issue resolution.
- Lead and hold FOH, BOH, and prep teams accountable for consistent execution across every shift.
- Recruit, hire, onboard, train, schedule, coach, and retain a reliable, high-performing team.
- Develop managers and shift leaders who can run successful shifts without constant supervision.
- Drive sales while managing labor, food cost, inventory, controllable expenses, and profitability.
- Monitor guest feedback and service trends, resolve escalated concerns, and implement improvements that strengthen customer satisfaction and loyalty.
- Maintain high standards for food quality, portioning, prep, ticket times, cleanliness, and restaurant appearance.
- Use sales forecasts to plan staffing, preparation levels, and shift readiness.
- Manage ordering, receiving, storage, product rotation, inventory counts, and waste control.
- Review sales, labor, food cost, guest feedback, and operating reports, and create action plans when results fall below expectations.
- Ensure recipes, food-safety standards, sanitation procedures, opening and closing processes, cash controls, and company policies are followed.
- Resolve guest, employee, equipment, and operational issues promptly and professionally.
- Maintain a strong, visible leadership presence during peak business periods.
- Communicate performance results, staffing needs, operational risks, and action plans to company leadership.
Requirements
- At least 3 years of restaurant management experience.
- Experience directly overseeing front-of-house, back-of-house, and prep operations.
- General Manager or Assistant General Manager experience preferred.
- Experience managing sales, labor, food cost, inventory, scheduling, and controllable expenses.
- Ability to understand restaurant financial reports and profit-and-loss statements.
- Proven ability to recruit, train, coach, and manage employee performance.
- Strong leadership, communication, organization, and problem-solving skills.
- Experience using point-of-sale, scheduling, inventory, and reporting systems.
- Current food manager certification, or the ability to obtain one within the required timeframe.
- Bilingual in English and Spanish preferred to support team communication and guest service.
- Dependable attendance and the ability to work on-site.
- Availability to work a flexible restaurant schedule, including mornings, evenings, weekends, and holidays based on business needs.

Compensation
- Base salary: $72,000-$80,000/year
- Performance bonus structure

- Full-time, on-site position. 45-50 hours per week
- Actual starting compensation within the posted range will be based on relevant experience, qualifications, and other lawful job-related factors.
