JOB PURPOSE:
Washes all pots, pans, dishes and utensils following policies and procedures to ensure sanitary conditions at all times.
EDUCATION AND TRAINING:
Tenth grade education. Previous dishwashing experience preferred. Must possess or be able to obtain a Maricopa County food service worker card.
JOB RESPONSIBILITIES:
Washes pots, pans, dishes, trays and utensils by hand ensuring cleanliness and complying with Maricopa
County Health Department standards.
Maintains kitchen work areas in a safe and clean manner to ensure cooks and wait staff will be able to work efficiently.
Maintains restaurant equipment and utensils in clean and orderly condition.
Responsible for breaking down and reassembling dish machine for cleaning 2 times a day.
Maintains high temperature sanitizer log by use of temperature tape or other testing device.
Responsible for using test strips to maintain 100 ppm (parts per million) sanitizer per 10 gallons of warm water in pots and pans station.
Washes work tables, walls, refrigerators and floors reporting any building or equipment repairs to director of food services.
Washes pots, pans and trays by hand ensuring cleanliness.
Scrapes food from dirty dishes and places them in dishwashing machine racks.
Assumes responsibility for inspecting items coming from dishwashing machine for cleanliness and reporting any problems immediately to the assistant chef or director of food services.
Responsible for properly washing hands as trained before starting each new task; wears gloves as trained.
Participates in maintaining written procedures for all departmental job functions.
Possesses ability to work in a hot, damp environment.
Lifts and transfers stacks of dishes and glasses weighing up to 60 lbs., up to twenty times per shift.
Must be able to stand and walk for an 8 hour shift.
Annually reviews company policies.
Annually reviews department training video(s).
Safeguards self, residents and fellow employees through safe work practices.
Other duties may be assigned.
