Overview
We are seeking a passionate and highly skilled Head Sushi Chef experienced in Japanese cuisine. As the Head Sushi Chef, you will oversee all aspects of sushi preparation, menu development, and kitchen operations, ensuring every dish meets our high standards of excellence.
Duties
- Lead the sushi kitchen team by providing clear direction, training, and mentorship to ensure top-quality food preparation and presentation
- Develop innovative sushi menus that highlight fresh ingredients and align with current culinary trends
- Oversee daily kitchen operations, including food production, inventory control, and maintaining cleanliness standards in compliance with food safety regulations
- Manage food handling procedures to ensure safety and hygiene across all stages of sushi preparation
- Supervise food service during peak hours, ensuring timely delivery of dishes that meet quality standards
- Monitor inventory levels of raw materials such as fish, rice, seaweed, and other ingredients; place orders as needed to prevent shortages
- Collaborate with the restaurant management team on catering events, banquet functions, and special dining occasions involving sushi offerings
- Enforce strict adherence to health codes and safety protocols while fostering a positive team environment focused on excellence
Requirements
- Proven experience as a Head Sushi Chef or similar leadership role within a high-end restaurant setting
- Extensive culinary experience with a focus on Japanese cuisine, including sushi preparation techniques
- Strong supervisory skills with experience managing kitchen staff in fast-paced environments
- Knowledge of food industry standards related to food safety, handling, and sanitation practices
- Demonstrated ability in menu planning, food production, and inventory management
- Excellent leadership qualities with the ability to motivate and develop team members
- Experience in banquet service, catering, or large-scale food production is highly desirable
- Familiarity with kitchen management systems and inventory control tools
- Ability to work flexible shifts including evenings, weekends, and holidays as required
