A well-established skilled nursing and long-term care facility in Jacksonville, FL is seeking a Certified Dietary Manager (CDM) to lead its Food & Nutrition Services department. Key Responsibilities
Manage daily operations of the dietary/food service department in a long-term care setting
Ensure compliance with federal, state, and local regulations (CMS, sanitation, food safety)
Plan, organize, and oversee meal preparation, service, and delivery
Monitor therapeutic diets, including texture-modified diets and nutritional needs
Supervise, train, schedule, and evaluate dietary staff
Manage food inventory, purchasing, and departmental budget
Maintain a clean, safe, and sanitary kitchen environment
Participate in care plan meetings and collaborate with the interdisciplinary team
Support QAPI (Quality Assurance & Performance Improvement) initiatives
Track and reduce food waste and improve operational efficiency
Qualifications
Certified Dietary Manager (CDM) – required
Food Protection Manager Certification (e.g., ServSafe) – required
Minimum 2+ years of food service management experience
Prior experience in skilled nursing, long-term care, or healthcare foodservice preferred
Strong knowledge of food safety regulations, sanitation standards, and dietary compliance
Experience with staff supervision, scheduling, and budgeting
Associate’s degree or higher in Food Service Management, Hospitality, or related field – preferred
Must meet Florida state requirements for dietary/food service managers
