Job Summary
Bakery De France is seeking a skilled and motivated Dough Operator to support daily dough production operations. This hands-on role is responsible for monitoring ingredient dosing, mixing processes, and dough quality to ensure the consistent production of high-quality bakery products. The Dough Operator monitors key dough parameters, performs approved process adjustments, and helps maintain a safe, clean, and productive work environment.
Reporting to the Line Responsible and Production Supervisor, the Dough Operator communicates dough quality concerns, ingredient deviations, equipment issues, and other operational matters that may impact production performance.
Key Responsibilities
Production Operations
- Monitor automatic ingredient dosing systems and manually add ingredients when required.
- Operate and monitor mixers and dough-handling equipment according to established procedures.
- Monitor mixing times, mixer speeds, dough temperature, hydration, and consistency.
- Perform approved process adjustments to maintain product specifications and dough quality.
- Transfer dough to the next stage of production while preserving product integrity.
- Coordinate with Line Operators to ensure a continuous flow of dough to production.
- Follow all food safety, sanitation, GMP, and workplace safety requirements.
- Maintain a clean, organized, and safe work environment.
- Perform other duties as assigned.
Dough Quality
- Monitor and record dough temperature, consistency, gluten development, hydration, visual appearance, and mixing time.
- Verify that dough meets established product specifications and quality standards.
- Identify and report abnormal dough conditions, including hydration, temperature, and ingredient deviations.
- Communicate dough quality concerns and process deviations to the Line Responsible and/or Production Supervisor.
Qualifications
- Previous manufacturing, food production, or bakery experience preferred.
- Experience operating industrial production equipment preferred.
- Ability to work overtime, weekends, and holidays as required.
Knowledge, skills and abilities
- Knowledge of food safety, sanitation, GMP, and HACCP (Hazard Analysis and Critical Control Points) requirements.
- Knowledge of dough mixing processes and ingredient functionality.
- Ability to monitor and maintain dough quality, including temperature, hydration, consistency, and gluten development.
- Ability to follow recipes, formulas, and production specifications accurately.
- Basic mechanical aptitude and the ability to operate and monitor mixing equipment.
- Strong attention to detail and commitment to product quality.
- Ability to identify, communicate, and respond to dough quality deviations.
- Basic math and measurement skills.
- Strong communication and teamwork skills.
- Ability to work effectively in a fast-paced production environment.
Physical Requirements
- Ability to wear required Personal Protective Equipment (PPE).
- Ability to stand and walk for extended periods.
- Ability to lift, carry, push, and pull up to 50 pounds.
- Ability to bend, reach, twist, stoop, kneel, and climb stairs or ladders as required.
- Ability to perform repetitive tasks in a production environment with varying temperatures, noise levels, and moving machinery.
Pay: $20.00 - $21.00 per hour
