Role Overview
The Expo (Expeditor) is the communication hub between the kitchen and front-of-house team, ensuring every dish is accurate, complete, and delivered quickly. In a breakfast setting, this role is critical for handling high-volume, fast-turn tables while maintaining food quality and timing.

Core Responsibilities
1. Order Coordination & Timing
- Read and organize tickets from the POS system
- Call out orders clearly to kitchen staff (sides, modifiers, etc.)
- Ensure all items for a table are ready at the same time
- Manage ticket flow during peak rush (weekends especially)

2. Food Quality & Accuracy
- Check plates for accuracy (correct sides, modifiers, etc.)
- Ensure proper presentation before food leaves the kitchen
- Catch and fix mistakes before dishes go out

3. Communication Hub
- Act as the bridge between servers and kitchen staff
- Communicate special requests, allergies, and modifications clearly
- Provide updates to servers on delays or re-fires

4. Plate Assembly & Garnishing
- Assist in final plating (sides, garnishes, sauces)
- Ensure plates are clean, organized, and visually appealing
- Organize trays for efficient food running

5. Speed & Workflow Management
- Prioritize tickets based on timing and table needs
- Keep the line moving smoothly during rush periods
- Work closely with cooks to maintain pacing and avoid bottlenecks
