Spettro is hiring a Sous Chef!
Spettro, our upscale Italian spot in Poughkeepsie, NY, is on the hunt for an outstanding Sous Chef. We’re all about delivering an amazing dining experience—think authentic, regional Italian food, the freshest seasonal stuff, and that classic warm hospitality.
You'll be leading the charge on most things: running the kitchen day-to-day, mentoring the team, and keeping our food quality and hygiene seriously top-notch, especially when it comes to elevated Italian cooking.
Your Day-to-Day:
- Be the Creative Genius: Design fresh, seasonal specials weekly. We want dishes that respect classic Italian traditions but aren't afraid of a modern twist. And yeah, they need to taste great and make sense for the business.
- Keep it Consistent: Oversee all food prep—make sure every plate that leaves the kitchen is perfect, and cohesive every time. You will also be in charge of major fabrications, larger prep items, specials and new menu prep.
- Supplier Relations: Work closely with our trusted suppliers (especially those for authentic Italian goods and local produce) to ensure we always have the best ingredients at the best price we can get. Pricing is huge for us.
- Stay Sharp: Keep your finger on the pulse of both classic and emerging Italian techniques and trends.
- Reporting: Everything you do, will be run through the Culinary Director, before it is passed on to the Owners. I.e. specials, new menu ideas, and any major routine changes. You will work directly with the Culinary Director in all aspects of this job.

- Smooth Sailing: Manage the kitchen’s daily operations and keep our equipment running smoothly.
- Safety First: Ensure the team strictly follows all health, safety, and hygiene rules.
- Efficiency Guru: Streamline workflows so we’re always working smart, not just hard, and keeping waste to a minimum.
- Budget Boss: Manage the kitchen budget—keep food and labor costs in check to hit our financial goals.
- Equipment Care: Monitor and maintain the cleanliness and working order of all kitchen equipment.
Leading the Team
- Be a Mentor: Offer consistent feedback, do performance check-ins, and make sure the kitchen is a positive, respectful, and professional place to be.
- Lead by Example: Stay cool, focused, and efficient, especially when the rush hits!
Pay: $50,000.00 - $60,000.00 per year
