JOB SUMMARY
This position is responsible for planning and preparing meals for inmates, staff and the Columbia County Senior Center.
CHAIN OF COMMAND
This position answers to the Sergeant over Kitchen / Laundry Operations.
MAJOR RESPONSIBILITIES/DUTIES

Prepares meals for inmates, staff and the Columbia County Senior Center

Ensures meals are cooked and ready for distribution at the scheduled times
-
Ensures inmate trays are complete and include the appropriate portion control prior to distribution
-
Ensures meals are delivered at the scheduled times
-
Ensures proper cleaning of kitchen facilities
-
Operates kitchen equipment
-
Trains and monitors the work of the kitchen trustees
-
Ensures trustees adhere to the rules and regulations of the kitchen
-
Orders food in bulk under the direction of the Sergeant
-
Performs other duties as needed
KNOWLEDGE OR SPECIAL SKILLS REQUIRED FOR THIS POSITION

Knowledge of maintaining proper food and supply inventories
-
Knowledge of portion control procedures
-
Knowledge of jail security is preferred
-
Skill in preparing meals for a large number of people
-
Skill in the operation of kitchen equipment
MINIMUM QUALIFICATIONS
-
Ability to read, write and perform basic mathematical calculations
-
One year of experience as a food service worker
-
Must pass all drug screens
