Primary Responsibility: Oversee front-of-house service, guest experience, staff execution, dining room flow, reservations, table management, cleanliness, training, and communication between service teams at Ritual Rooftop.
Daily
● Manage FOH staff including servers, hosts, bussers, runners, support staff, and floor leads as applicable.
● Confirm dining room, host stand, service stations, restrooms, rooftop areas, menus, seating charts, reservations, and floor plans are ready before service.
● Monitor seating flow, table turns, reservations, wait times, guest pacing, service steps, and guest satisfaction during service.
● Coach staff in real time on hospitality, menu knowledge, service timing, upselling, professionalism, and guest recovery.
● Communicate with Kitchen, Bar, Events, VIP, and management teams regarding large parties, special requests, timing, allergies, VIP guests, and service concerns.
● Handle guest concerns promptly and professionally, escalating serious issues to the AGM or GM as needed.
● Ensure closing side work, cleanliness, cashout procedures, shift notes, and handoff communication are completed.
Weekly
● Create or assist with FOH schedules based on reservations, events, weather, holidays, nightlife, staffing levels, and labor goals.
● Review service performance, guest feedback, employee attendance, training needs, and staffing concerns.
● Train FOH staff on service standards, menu knowledge, beverage knowledge, POS procedures, guest communication, and upselling.
● Coordinate with Events Manager for large parties, private events, floor plans, service needs, and guest expectations.
● Coordinate with VIP Manager when dinner service transitions into nightlife on VIP seating impacts FOH flow.
● Maintain FOH supplies, menus, uniforms, service tools, printed materials, and guest-facing presentation standards.
Payroll and Admin (Weekly)
● Review FOH timecards, missed punches, attendance, tip reporting, schedule adherence, and labor usage.
● Monitor FOH labor compared to sales, reservations, events, and service volume.
● Flag performance issues, disciplinary concerns, training gaps, and staffing problems for management review.
Events / Marketing
● Ensure FOH staff are prepared for private events, holiday events, promotions, nightlife transitions, and high-volume shifts.
● Communicate marketing promotions, menu features, special offers, and event details to FOH staff.
● Protect the guest experience when marketing campaigns, events, or VIP bookings increase volume.
Monthly
● Evaluate FOH staff performance, service consistency, guest feedback, staffing levels, and training progress.
● Adjust service procedures, floor plans, side work, reservation handling, and training priorities as needed.
● Review guest complaints, online reviews, comment trends, and service recovery opportunities.
