Job Summary:
The Prep Cook plays an essential part in Ted’s Café Escondido Restaurants’ operations. Prep Cooks make all of our recipes from scratch daily with the best quality ingredients. The prep room is the heartbeat of the kitchen. Consistency, accuracy and organization during initial preparation make it possible to supply our guests with the best Mexican food in the restaurant industry.
Responsibilities:
There are three positions in the prep area for the morning shift and three positions for the evening shift. You may learn one or all of them. At any given time, all of the positions may not be staffed for whatever reason. In that case, the prep cook’s cross over and assume additional duties. We all work together as a team to get the job done. The manager is responsible for delegating the work and insuring that the needs of the restaurant are met.
Prep 1 AM is responsible for all sauces, ground beef, shredded beef, line chicken, cheese sauce, sour cream sauce, chili con carne, green sauce, ranchera, pork verde, spinach, rice, and beans
Prep 2 AM is responsible for all three of our salsas, grilling fajita meat, prepping ground beef, shredded beef, line chicken, chili concentrate for the line, and preparing all fried items…chips, taco shells, taco salad shells, etc….
Prep 3 AM is responsible for guacamole, relish, pico, grated cheese, tortillas, and marinated fajita meat. Prep of tortilla balls
Prep 1 PM is responsible for all sauces, ground beef, shredded beef, line chicken, cheese sauce, sour cream sauce, chili con carne, green sauce, ranchera, pork verde, spinach, beef & chicken tamales, chili rellenos, rice, beans, papas, and corn con crema
Prep 3 PM is responsible for guacamole, relish, pico, grated cheese, tortillas, cheese enchiladas, marinated fajita meat, and helping prepare beef & chicken tamales with
Prep 1. Prep of tortilla balls
Expectations:
- Works at a fast and steady pace
- Works organized to eliminate extra or unnecessary steps
- Produces prep items within standard time frames
- Participates in “clean as you go” mentality
- Executes all cleaning duties
- Keeps storage areas and walk-ins clean and organized
- Has knowledge of all ingredients of the recipes
- Produces prep items to recipe portioning and procedures

Always uses scales, measuring spoons, measuring cups, etc.. while producing recipes
- Works well with all staff members
- Takes direction well from management
- Uses tools (knives, VCM, Hobart, etc..) correctly
- Cares for all tools and equipment
- Knows how to sanitize and operate all kitchen equipment
General
- Attend all mandatory meetings.
- Comply with all federal, state, and local regulations for your department
- Treat all staff members and guests with respect
- Contribute to a positive working environment
- Maintain confidentiality with all company information
- Ensure that you are knowledgeable of your specific responsibilities in the event of an emergency
Work Conditions:
- Varied working hours to include weekends, holidays, late evenings, and early mornings as needed
- Must be able to stand and/or walk 8+ hours daily
- Must be able to lift 25 lbs. frequently, 50 lbs. occasionally, and objects over 50 lbs. rarely
- Frequent bending, reaching, grasping, and climbing
- Occasional squatting, kneeling, crawling, and fine manipulation
Minimum Qualifications:
Experience
-
previous prep kitchen experience in a high volume restaurant is preferred
General Qualification
- Professional in attitude, demeanor, and dress
- Good organizational skills and ability to work under pressure
