About the Position
Hachi Sushi is seeking an experienced, responsible, and hands-on Restaurant General Manager to lead the day-to-day operations of our busy Japanese restaurant.
We are looking for a strong leader who can take ownership of restaurant operations, build and manage a reliable team, maintain excellent customer service, control labor and food costs, reduce waste, solve problems independently, and help grow the business.
This is not simply a shift supervisor position. We are looking for a General Manager who can learn our restaurant's systems and standards and gradually take full responsibility for normal day-to-day operations.
Ownership will provide training, guidance, and support during the initial transition period. As the General Manager becomes familiar with the restaurant, they will be expected to operate increasingly independently and communicate effectively with ownership regarding important business matters.
Compensation & Benefits
- Annual Salary: $75,000–$80,000, based on experience and qualifications
- 2 weeks paid vacation per year
- Free lunch and dinner while working
- Quarterly performance bonus: $300–$500
- Additional annual performance bonus opportunity based on sales growth, profitability, cost control, customer satisfaction, staffing, and overall restaurant performance

Schedule
- Approximately 55–60 hours per week
- Generally 5–6 days per week
- Must be available for key lunch and dinner shifts
- Evening, weekend, and holiday availability is required based on business needs
- Must be willing to step in and assist with restaurant operations when unexpected staffing shortages or emergencies occur
Key Responsibilities
- Oversee the restaurant's daily operations
- Recruit, interview, hire, onboard, and train employees
- Create and manage employee schedules
- Maintain appropriate staffing levels while controlling labor costs
- Manage employee attendance, punctuality, performance, and workplace standards
- Coach, recognize, discipline, and, when appropriate, terminate employees
- Develop strong employees into future supervisors or assistant managers
- Handle customer complaints professionally and resolve problems promptly
- Maintain high standards of customer service and hospitality
- Monitor restaurant cleanliness, organization, and food-safety standards
- Monitor food costs, portion control, food waste, and unnecessary product loss
- Monitor inventory and ordering to prevent shortages, over-ordering, and excessive waste
- Help control labor costs and other operating expenses
- Ensure opening and closing procedures are completed correctly
- Coordinate front-of-house and back-of-house operations
- Assist ownership with recruiting sushi chefs and kitchen employees
- Ownership will initially assist with evaluating specialized sushi and kitchen skills
- Monitor online customer reviews and address recurring customer-service issues
- Assist with basic restaurant marketing, promotions, and social-media activities
- Monitor sales performance and identify opportunities to increase revenue
- Identify operational problems and implement practical solutions
- Respond appropriately to employee call-offs and unexpected staffing shortages
- Step into restaurant operations when necessary to maintain service
- Provide regular updates to ownership regarding sales, staffing, labor costs, food costs, inventory, customer issues, and overall restaurant performance
- Develop and maintain systems and procedures that allow the restaurant to operate consistently without constant owner supervision
Qualifications
- Minimum 3 years of restaurant management experience preferred
- General Manager, Assistant General Manager, or equivalent restaurant leadership experience strongly preferred
- High-volume restaurant management experience preferred
- Experience managing a team of 15 or more employees preferred
- Japanese, sushi, Asian restaurant, AYCE, or buffet experience is a plus, but not required
- Strong leadership and employee-management skills
- Experience with hiring, training, scheduling, coaching, discipline, and employee performance management
- Working knowledge of labor cost, food cost, inventory, portion control, and waste management
- Strong customer-service and conflict-resolution skills
- Basic understanding of restaurant marketing, promotions, and social media
- Strong organizational, communication, and problem-solving skills
- Able to make sound decisions independently
- Reliable, accountable, professional, and hands-on
- Must be comfortable working approximately 55–60 hours per week
- Must be available to work evenings, weekends, and holidays based on business needs
90-Day Introductory Evaluation Period
The first 90 days of employment will be considered an introductory evaluation period.
During this period, ownership will evaluate the General Manager's:
- Leadership and management ability
- Reliability and accountability
- Employee management and scheduling
- Hiring and training ability
- Customer-service and complaint-resolution skills
- Labor and food cost awareness
- Inventory and waste control
- Cleanliness and operational standards
- Problem-solving and decision-making ability
- Ability to manage the restaurant independently
- Overall fit with the restaurant and management team
Performance may be reviewed throughout the introductory period, including approximately 30-day, 60-day, and 90-day reviews.
Employment is at will. Successful completion of the introductory evaluation period does not guarantee employment for any specific duration or alter the at-will employment relationship.

Quarterly performance bonuses are based on overall restaurant performance and may consider factors including:
- Sales performance
- Food cost and waste control
- Labor cost management
- Customer satisfaction and complaint management
- Cleanliness and restaurant standards
- Employee performance and staffing stability
- Overall management performance
Additional annual bonus opportunities may be available based on sales growth, profitability, cost control, and overall business performance.
