For decades, Cadillac Cafe has been one of Portland's most beloved breakfast and brunch destinations, known for exceptional food, warm hospitality, and a loyal following. We're seeking an experienced Kitchen Manager to lead our Back of House operations and help us continue delivering the quality our guests have come to expect.
This is a hands-on leadership role for someone who thrives in a fast-paced environment, enjoys developing teams, and understands how to balance food quality, labor management, and profitability.
Responsibilities
Kitchen Operations
- Oversee all daily back-of-house operations.
- Ensure food is prepared and presented according to established standards.
- Maintain consistency in quality, portioning, temperature, and presentation.
- Work the line during peak business periods as needed.
- Ensure a clean, organized, and efficient kitchen environment.
Inventory & Purchasing
- Manage food, beverage, and supply ordering.
- Maintain proper inventory levels based on business volume.
- Conduct monthly inventory counts.
- Build and maintain strong relationships with vendors.
- Control food waste through effective inventory management and product utilization.
Labor & Cost Management
- Create and manage BOH schedules based on forecasted sales.
- Monitor labor costs and staffing levels to meet financial goals.
- Maintain food cost and cost-of-goods targets.
- Manage kitchen expenses within approved budget guidelines.
- Analyze sales and POS reports to support menu and operational decisions.
Team Leadership
- Recruit, interview, hire, train, and retain BOH employees.
- Conduct performance reviews and provide ongoing coaching.
- Lead staff meetings and training focused on food quality, safety, sanitation, and new menu items.
- Foster a positive, accountable, and team-oriented culture.
- Lead by example with professionalism, attention to detail, and a strong work ethic.
Menu Development & Quality
- Develop seasonal features, daily specials, and new menu offerings.
- Stay current with food trends and guest preferences.
- Evaluate menu performance and recommend changes to improve sales and profitability.
Food Safety & Compliance
- Ensure compliance with all Multnomah County Health Department requirements.
- Maintain proper food handling, labeling, storage, and sanitation standards.
- Achieve and maintain health inspection scores of 95 or higher.
- Ensure a safe working environment for all team members.
Qualifications
- 3+ years of restaurant kitchen management experience preferred.
- High-volume restaurant experience required.
- Strong knowledge of food cost, inventory control, and labor management.
- Experience hiring, training, and managing kitchen teams.
- Excellent leadership, communication, and organizational skills.
- Ability to multitask and perform under pressure.
- Proficiency with Microsoft Word, Excel, and Outlook.
- Oregon Food Handler Card required; Food Safety Manager Certification preferred.
Physical Requirements
- Ability to stand for extended periods.
- Ability to lift and carry up to 50 pounds.
- Ability to bend, reach, stoop, and climb stairs.
- Ability to work in a fast-paced, hot kitchen environment.
- Ability to safely operate kitchen equipment and tools.
