Job Title: AM Prep Cook (Strong / Lead Prep)

Compensation: $20.00 – $22.00 per hour (depending on experience)
We are looking for a skilled and efficient AM Prep Cook to anchor our morning kitchen operations. Our restaurant is an unpretentious, casual dining Korean concept. We focus on serving high-quality, high-flavor Asian comfort foods. As the strong morning prep, you will set the foundation for the entire day. You will independently manage the morning prep list, master complex flavor profiles, and ensure the line is fully stocked and ready before the doors open.Key Responsibilities
- Morning Execution: Open the kitchen and efficiently manage the daily AM prep list without supervision.
- Bulk Cooking: Prepare large-batch Korean comfort items, including long-simmering broths, stocks, stews, and rice.
- Marinades & Sauces: Measure, blend, and portion signature house sauces, dressings, and meat marinades.
- Precision Prep: Wash, peel, and chop high volumes of produce and slice meats with speed and consistency.
- Line Setup: Fully stock and organize the line cook stations, ensuring a seamless handoff for the lunch rush.
- Food Safety & Inventory: Label, date, and store all items using strict FIFO methods. Monitor morning inventory and report shortages.
- Kitchen Cleanliness: Maintain a spotless, organized walk-in cooler and prep station. Clean and sanitize tools throughout the shift.
Required Skills and Qualifications
- Experience: Minimum 2 years of high-volume kitchen prep experience. Experience with Korean or Asian ingredients is highly valued.
- Advanced Knife Skills: Fast, precise, and safe knife work for bulk vegetable and meat preparation.
- Independence: A self-starter who can multi-task, manage time under tight morning deadlines, and work independently.
- Recipe Literacy: Ability to precisely follow written recipes, scale measurements, and maintain flavor consistency.
- Certifications: Valid local food handler certification required.
- Physical Stamina: Ability to stand for long periods, work in hot/cold environments, and lift up to 50 pounds.
