Job Overview
Help ensure compliance with federal, state, local, and company requirements related to menu planning and recipe development. Work collaboratively with the culinary and purchasing departments on menu and recipe development, researching food products for compliance, and implementing tools and programs to improve compliance. Responsible for providing coaching and training to site-level staff on compliant procedures and proper documentation, as well as traveling to sites both ahead of and during administrative reviews to assist with program success.
Responsibilities
- Develop menus in collaboration with the corporate chef, regional and area managers.
- Write and revise recipes in collaboration with the corporate chef and others as necessary.
- Research food products to determine compliance with federal and program requirements.
- Prepare documentation required for administrative reviews.
- Assist in assignment of project deliverables related to data-entry and documentation collection processes.
- Coach site-level staff on compliant procedures and proper documentation.
- Travel to sites ahead of scheduled administrative reviews to assist with preparation.
- Travel to sites when scheduled to receive administrative reviews to provide support during review.
- Train site-level staff on how to accommodate special dietary needs of students as necessary.
- Implement new tools and programs to improve practices related to compliance.
- Enter menu data and nutrient/allergen information into computerized menu system.
- Analyze and assess menus for meal compliance.
- Assist with menu development and new product procurement for student acceptability.
- Attend state and national training related to federal and local requirement regulation training.
- Analyze RFP menus to ensure compliance with requirements.
- Provide meal pattern assistance and training to site-level staff.
- When necessary, assist with creating work schedules for café staff.
- Assist café staff to organize their daily/weekly/monthly paperwork in a compliant manner.
- Evaluate and assist staff with production records.
- Provide training on nutrition education, dietary restrictions, and federal and local requirement regulation
- Complete other duties or administrative request50assigned.
Qualifications
- Bachelor’s degree in nutrition, Dietetics, or a related field.
- Experience with menu planning, recipe development, and other CN compliance requirements.
- Excellent communication and coaching skills.
- Ability to travel to company sites to provide support during administrative reviews.
- Familiarity with HACCP policies and procedures.
- Strong work ethic and team player.
- Strong interpersonal (verbal and written) communication skills.
- Ability to communicate with various levels of management.
- Excellent organizational, multi-tasking, and prioritizing skills.
- Ability to pass an extensive nationwide criminal background check and fingerprint analysis.
- Ability to travel.
- Registered Dietitian (RD) with active license in good standing.
