JOB DESCRIPTION: Catering Chef Lead
Who We Are: SaltBlock Hospitality is an award-winning catering and hospitality group based in Tampa, Florida, known for chef-driven cuisine and highly customized events at venues like Armature Works, Tampa Museum of Art, Hyde House private residences + more! We're not a standard banquet kitchen, every SaltBlock event runs on a curated menu built around that event's specific vision, which takes real attention to detail, sharp time management, and the confidence to run a kitchen through anything a live event throws at it.
The Role: We're looking for a skilled, experienced culinary professional to join our Catering Division as a Catering Chef Lead — prepping menu items with our commissary team, then stepping into the lead role on-site to run kitchen operations and guide your team through production and plating. This role is built for a chef who's led teams in fast-paced kitchens and wants the variety of custom event work, where the venue, menu, and room change every time out.
If you excel at guiding a team under pressure, love creating memorable food experiences, and take pride in delivering exceptional, consistent results, we'd love to connect with you.
Critical Responsibilities & Deliverables mini
Event Leadership & Execution
- Lead by example in managing kitchen setup, event execution, and breakdown, delegating effectively and holding the team accountable for timely, professional results.
- Direct the on-site kitchen team through heating, frying, carving, garnishing, and replenishing food items, following execution guides and reheat schedules to keep plating and timing on point.
- Serve as the on-site culinary point of contact, working in tandem with the Event Lead and clients when needed, and communicating menu details confidently to guests.
- Collaborate closely with the FOH Event Lead to keep culinary and front-of-house moving as one cohesive team, and demonstrate reliability even when supporting another lead chef.
- Ensure proper tools, equipment, and resources are in place for a smooth off-site kitchen setup, anticipating needs before they become problems.
- Support guest satisfaction through responsiveness, professionalism, and attention to detail, assisting with real-time problem-solving as it comes up.
Quality Control & Production
- Ensure all food items meet SaltBlock standards for flavor, quality, presentation, and consistency, and enforce compliance with dietary restrictions and allergen guidelines.
- Understand and follow temperature regulations and food safety standards before, during, and after the event, and review BEOs to confirm accurate execution of menus and service expectations.
- Reference menu item production reports to determine accurate quantities, executing prep and production tasks according to established recipes and event-specific needs.
- Assist with packing, labeling, and organizing event items for transport, and support junior team members to ensure quality and readiness.
- Maintain a clean, organized, and sanitary workspace throughout prep and service, in compliance with food safety and sanitation standards.
- Communicate proactively with culinary leadership about production progress, shortages, or adjustments needed to meet event demands.
Skill and Behavioral Expectations
- Calm problem-solving and adaptability in fast-paced, high-pressure situations — custom menus mean no two events run the same.
- A polished, professional appearance and uniform standard.
- Positive, confident engagement with clients, guests, and team members.
- Detail-oriented focus and real adherence to timelines.
- A growth mindset — picking up staff shifts or cross-training opportunities to deepen your knowledge of SaltBlock's kitchen operations and event execution.
