Primary Purpose: Lead Team of Line Cooks in Prep and Execution of Food items offered at the Minnesota State Fair
Employment for this position begins early August for orientation and training. The Minnesota State Fair itself runs Thursday, August 27th - Monday September 7th!

Ideal candidates will have at least 3 year experience in the following areas:
1. Kitchen Leadership
· Be accountable to the performance and execution of opening and closing lists.
· Be accountable to and facilitate the training and job performances of the cooking team.
· Engage with each cook’s skill acquisition and ongoing development.
· Be direct and clear with expectations for all cooks.
· Foster engagement and communication between the servers, cooks, and drink brewers.
· Coordinate employee breaks and support with the covering of missing employee shifts when need arises.
· Effectively communicate all changes and decisions made regarding food production and spatial organization.
· Check in daily with the service teams, kitchen teams, and Brew Room Lead and check in and out daily with other kitchen shift leads.
· Maintain ingredient and supply par levels, and communicate outages and shortages appropriately.
· Be accountable to the retrieving and stocking of ingredients from offsite storage areas.
· Ensure sanitation and cleanliness procedures are followed by each cook.
· Help develop and maintain systems for cleaning and spatial organization of the food trailers.
· Know and follow Health Department guidelines and expectations.
· Hold all employees accountable to following cleanliness standards.
· Report equipment repair needs to booth leadership.
2. Prep
· Prep Food items according to MFU’s systems, specifications, and pars.
· Prepare, stock, and rotate ingredients for your station according to needs and pars.
· Restock Food items to stations and coolers as needed and towards the end of your shift.
· Keep the Food items on prep stations and in coolers clean and organized before, during, and after shifts.
· Cool items at end of day in the walk-in cooler (rather than on the food trailer).
3. Line Cooking and Assembly
· Assemble Food items according to MFU’s systems, specifications, and pace of service.
· Prepare, stock, and rotate ingredients for your assembly station according to needs and pars.
· Restock Food items for assembly stations and coolers as needed and towards the end of your shift.
· Keep the Food items for assembly stations and coolers clean and organized before, during, and after shifts.
· Politely and professionally answer Expo’s questions and requests.
4. Expo
· Provide helpful, professional communication and response to requests from Servers.
· Ensure that Food items are not sent to service without being prepared to MFU’s expectations for quality and presentation.
· Ensure that Food items are delivered where and to whom they need to go.
· Ensure that Food items are delivered to guests quickly, while still fresh and to the expected temperature.
· Keep the trailer’s Expo station and pathways clean and organized before, during, and after shifts.

Pay: $22.00 - $26.00 per hour
