About the Role At Honest Harvest Pasta, we craft real food rooted in tradition, ancient grains, and direct relationships with local farmers. We don’t do industrial shortcuts or additives.
We are looking for a hands-on, detail-oriented Artisan Pasta Maker & Production Specialist to join our kitchen. You will learn and execute the craft of small-batch bronze-die extrusion, long-cycle slow drying, and filled pastas.
No formal culinary degree is required. If you bring restaurant kitchen, prep cook, bakery, or food manufacturing experience—along with a strong work ethic, physical stamina, and a passion for quality food—we will train you on our specialized machinery and production methods from day one.
What You’ll Do (Responsibilities)
- Small-Batch Production: Mill whole grains, mix specialty doughs, extrude pasta shapes using traditional bronze dies, and craft artisan ravioli.
- Process & Precision: Follow exact scaling, hydration, and recipe standards to ensure consistency across ancient-grain flours and fresh fillings.
- Drying & Quality Inspection: Manage our 72-hour "low & slow" drying cycles, monitor temperature and humidity, and inspect finished pasta for quality.
- Kitchen Stewardship: Maintain a spotless, food-safe commercial kitchen, upholding high food safety, equipment maintenance, and sanitation standards.
- Team Collaboration: Work directly with company founders on daily production planning, recipe execution, and workflow efficiency.
What We’re Looking For
- Restaurant & Kitchen Experience: Prior experience in restaurant kitchens (prep, line, or production), bakeries, or commercial food operations is strongly preferred.
- High Attention to Detail: You recognize that small variations in ingredient weights, water ratios, or temperature affect the finished product.
- Physical Stamina & Reliability: Ability to lift up to 50 lbs regularly, stand for portions of your shift, and arrive consistently on time.
- Coachability: Eagerness to translate your existing kitchen skills into mastering specialized artisan equipment (extruders, grain mills, ravioli formers) through hands-on training.
- ServSafe Food Handler and/or ServSafe Manager Certification is preferred.
