This is a rare opportunity for a serious sushi chef to join a restaurant with years of MICHELIN recognition, a growing hospitality group behind it, and a team focused on creating one of the strongest omakase experiences in New York.
We are not looking for someone average. We are looking for someone with discipline, passion, humility, and real Edomae skill — someone who wants to be part of something bigger than just another sushi job.
The right chef will step into a highly respected room, work with a serious team, and help shape what comes next.
What We Are Looking For
- Minimum 3–5 years of Edomae sushi experience
- Experience in a serious omakase or high-end Japanese restaurant
- Strong fish butchery and knife skills
- Understanding of traditional Edomae techniques, including aging, curing, marinating, and rice preparation
- High standards for cleanliness, organization, and consistency
- Calm, focused, professional, and team-oriented
- Passion for sushi, hospitality, and continuous improvement
- Japanese language skills are a plus
Responsibilities
- Execute omakase service with precision and confidence
- Prepare fish, rice, and all ingredients to the highest standards
- Maintain a clean, organized, and disciplined workstation
- Follow proper product handling, storage, and rotation
- Work closely with the chef and culinary team
- Represent the restaurant professionally in a guest-facing counter environment
