Position Summary
The Assistant General Manager (AGM) is a hands-on leader who partners with the General Manager to deliver exceptional daily operations, a polished guest experience, and a high-performing team at Txula. This role is responsible for upholding elevated service standards, driving team development, supporting financial performance, and ensuring operational excellence in a fast-paced, high-volume steakhouse environment within Mercado Little Spain.
The AGM serves as a highly visible presence on the floor, helping to create memorable guest experiences while maintaining the energy, precision, and warmth that define both Txula and José Andrés Group.
Key Responsibilities
Operational Leadership
- Lead daily front-of-house operations to ensure seamless, high-energy service at Txula.
- Uphold and reinforce JAG service standards, operational procedures, and hospitality expectations.
- Oversee opening and closing procedures, reservations flow, table management, and shift deployment.
- Ensure dining room, bar, and service stations are maintained to the highest standards of cleanliness, organization, and readiness.
- Partner closely with culinary leadership to maintain strong FOH/BOH communication, especially during peak service periods.
- Ensure compliance with all health, safety, sanitation, and labor regulations.
Guest Experience & Service Excellence
- Be highly present on the floor, leading by example through warm, confident, and engaging hospitality.
- Deliver an elevated yet energetic dining experience reflective of Txula’s identity as a Spanish steakhouse.
- Ensure the team is knowledgeable and confident in presenting the menu, including premium cuts, wood-fired preparation, and Spanish culinary influences.
- Respond to guest feedback with professionalism and urgency, ensuring effective service recovery.
- Lead pre-shift meetings to align the team on service priorities, VIP guests, menu features, and daily goals.
Sales & Brand Growth
- Drive revenue through strong floor leadership, reservation management, and hospitality-driven sales.
- Increase check averages through team education on premium offerings, wine pairings, and menu features.
- Support initiatives that build guest loyalty and awareness within Mercado Little Spain and the NYC market.
- Monitor guest feedback and online reputation, partnering with leadership to implement improvements.
Financial Performance
- Support the General Manager in managing labor, forecasting, and operational costs.
- Optimize staffing and floor deployment to balance service excellence with labor efficiency.
- Collaborate with culinary and beverage teams on inventory awareness, cost controls, and waste reduction.
- Contribute to achieving financial targets while maintaining high standards of service and product quality.
Team Leadership & Development
- Recruit, hire, and onboard top hospitality talent.
- Train and coach team members in service standards, product knowledge, and guest engagement.
- Foster a culture of accountability, collaboration, and continuous development.
- Conduct performance conversations, provide feedback, and support team growth.
- Build a strong leadership bench to support long-term success at Txula.
Project Support & Collaboration
- Support events, large parties, and activations within Txula and across Mercado Little Spain.
- Collaborate with other outlets and teams to ensure a seamless guest experience throughout the property.
- Assist in executing new initiatives, training programs, and operational improvements.
Required Qualifications
- 3–5+ years of progressive FOH leadership experience in upscale, high-volume, or fine dining restaurants.
- Experience in a steakhouse or chef-driven concept preferred.
- Proven ability to lead in a fast-paced, high-energy service environment.
- Strong knowledge of reservations and POS systems (SevenRooms, Resy, TOCK, MICROS, Toast, etc.).
- Excellent leadership, communication, and conflict-resolution skills.
- Ability to train, coach, and develop teams effectively.
- Knowledge of DOH, sanitation, alcohol service, and labor compliance standards.
- Strong food and beverage knowledge, particularly in premium proteins, Spanish cuisine, and wine pairings.
- Flexibility to work nights, weekends, and holidays.
Working Conditions & Physical Requirements
- Stand and walk for extended periods (up to 8 hours or more).
- Lift/push/pull up to 30 lbs. occasionally.
- Work in a fast-paced, high-volume environment requiring attention to detail.
- Exposure to varying temperatures and cleaning chemicals per safety standards.
