POSITION OVERVIEW
Eldorado Country Club is seeking a full-time PM Line Cook II-IV, to join our culinary team. The Cook is responsible for preparing and cooking food according to Club recipes, quality standards, and service requirements while maintaining a clean, organized, and food-safe workstation. The PM Line Cook is responsible for independently operating hot-line stations such as sauté, grill and fry; preparing proteins to specified temperatures; coordinating ticket timing; executing higher-volume à la carte service; and demonstrating greater technical cooking knowledge and experience.
ESSENTIAL DUTIES AND RESPONSIBILITIES include the following:
- Prepare, cook, and plate menu items according to established recipes and standards.
- Work assigned stations, including sauté, grill, pantry, fry, and preparation as needed.
- Read and execute guest orders accurately and efficiently.
- Accommodate allergies, dietary restrictions, and special requests as directed.
- Maintain proper food temperatures and follow all required food-safety procedures.
- Prevent cross-contamination through proper handwashing, sanitation, and food-handling practices.
- Properly label, date, store, and rotate food using FIFO procedures.
- Maintain appropriate station pars and notify the Chef or Sous Chef of shortages.
- Keep workstation, equipment, utensils, and storage areas clean and sanitary.
- Follow Club safety, sanitation, attendance, uniform, and workplace policies.
- Work cooperatively with culinary, stewarding, receiving, and front-of-house employees.
- Leadership – Maintain a positive, upbeat role, promote and exemplify Company values, and represents departmental objectives and interests to internal and external customers
- Customer Service – Follow up on complaints, questions, and concerns; respond to internal/external customer needs in a friendly, timely and efficient manner
- Teamwork - Develop and promote teamwork and cooperation among co-workers
- Safety – Comply with established safe work practices and attend to all safety-related training provided or made available by the Company.
- Other duties as assigned
QUALIFICATIONS
- Working knowledge of professional cooking techniques and kitchen terminology.
- Ability to safely prepare meat, poultry, seafood, vegetables, starches, soups, sauces, and other menu items.
- Ability to work assigned kitchen stations independently after appropriate training.
- Ability to read and follow recipes, prep lists, and guest orders.
- Ability to communicate effectively with supervisors and coworkers.
- Ability to work efficiently in a fast-paced kitchen environment.
- Reliable attendance and ability to work scheduled evenings, weekends, and holidays as required by Club operations.
- Previous professional kitchen experience preferred.
Required Licenses/Certifications
- Valid California Food Handler Card or other certification required by applicable law.
PHYSICAL DEMANDS
The employee must be able to perform the essential functions of the position, with or without reasonable accommodation, including:
- Ability to stand and stoop for long periods of time, lift over 10 lbs. at times.
- Stand and walk for extended periods.
- Bend, reach, stoop, and perform repetitive kitchen tasks.
- Regularly lift and carry kitchen products, equipment, and supplies.
