Responsibilities
- Prepare a variety of sushi, sashimi, and other Japanese-inspired dishes with expert technique and consistency.
- Maintain cleanliness and organization of the sushi station, ensuring all tools and ingredients are properly stored and sanitized.
- Develop new sushi recipes and presentation styles that excite customers and reflect current culinary trends.
- Ensure all food safety standards are met or exceeded, including proper handling of raw fish and seafood.
- Collaborate with kitchen staff to coordinate orders efficiently during busy service hours.
- Monitor inventory levels of ingredients, place orders as needed, and manage stock rotation to minimize waste.
- Educate team members on sushi preparation techniques, safety procedures, and quality standards.
Experience
- Proven experience working as a Sushi Chef or in a similar high-volume Japanese cuisine setting.
- Strong knowledge of sushi preparation techniques, knife skills, and ingredient sourcing.
- Experience with culinary arts including knife skills, fish filleting, and rice preparation.
- Familiarity with food safety protocols related to handling raw seafood.
- Ability to work efficiently under pressure while maintaining attention to detail.
- Prior experience in a fast-paced kitchen environment with teamwork-oriented mindset.
- Knowledge of culinary trends related to sushi presentation and innovative ingredient combinations.
